Nothing it's just like eaing any other food item. If you eat it without the sauce packet than it'd taste dry and crunchy.

Dry ramen noodles can be eaten as a snack. They have a slightly nutty taste and are quite good. They can also be broken up into a salad of greens for a crunchy treat. The packet of flavoring is just bouillon with lots of sodium.

Well, it would just be crunchy and make your mouth kind of dry. Of course, no flavor much at all without the little pack of boullion.
