For a White Lasagna:

Boil lasagna
Brown chopped garlic but don't burn
Brown hamburger meat
Drain meat add some italian spices (oregeno and thyme) and the garlic

Make a bechamel sauce.... 2 TBSP butter (margarine), 2-3 TBS flour, salt, pepper, and 2 cups milk boil till thickened slightly. Remove from heat.

Pour a bit of this bechamel in the 13 X 9 oblong pan or whatever size you are using... then add a layer of the lasagna noodles, add some meat on top... pour some bechamel... and continue this till the top of the pan. Finally add 2 cups of shredded mozzerella to the left over bechamel if there is any and top the lasanga... Bake at 350 degree (3-4 gas mark) until bubbly and browned.

Pasta Delight
Ingredients

200g pasta
1 courgette
1 red onion
1 red pepper
olive oil
4 fresh tomatoes
sun-dried tomato paste
nutritional yeast
¼ pint soya milk
2 oz vegan margarine
plain or sauce flour
salt and pepper

Cook the pasta as per the instructions on the bag. Drain and set aside.

Cut the courgette, onion and pepper into small chunks and fry in the olive oil until golden brown. Prick the tomatoes and place in a bowl of boiled water for five minutes. Carefully remove them and peel away the skins. Then chop them up and add them to the vegetables. Add a teaspoon of sun-dried tomato paste to the vegetable mixture and stir thoroughly. Taste the mixture and season if necessary. Mix the pasta with the vegetable mixture and spoon into a large oven proof dish.

Melt the margarine in a saucepan and add a teaspoonful of flour to thicken. Continue to add flour until it is the consistency of porridge. Then slowly stir in soya milk and stir until the mixture is smooth. Then add three tablespoons of nutritional yeast, salt and pepper and stir again until smooth. Taste the sauce and add more salt and pepper if necessary and then pour it over the pasta mixture. Bake in a moderate oven for 30 minutes.

In a red sauce, you can put in diced bell pepper, minced garlic, zucchini, mushrooms, and for the meat instead of using hamburger, use ground pork with Italian seasoning. Mix the sauce and the pasta together, put into a large baking dish, sprinkle grated cheddar and mozzarella, or what ever kind of cheese you like on top. Throw it in the oven at 400 degrees, just until the cheese is melted, serve and enjoy.
