I have a lot of favorite recipes but one recipe that I use for potlucks that is simple is one dish that was supposed to be served cold but found by accident it can be heated up and tastes just as good.

Top Ramen Chicken Salad

Grilled Chicken breast, sliced
Top Ramen Noodles
Chopped Cabbage, cooked
Sliced Almonds
Green Onions

Cook the cabbage (don't over cook). While the cabbage is cooking, break the noodles into small bite size chunks. Add the cabbage (the heat will help soften the noodles). Add some of the cabbage broth (make sure to use just enough to help soften the noodles, should not be soupy). Add the seasoning packets from the noodles. Stir together so that the cabbage and noodles are mixed thoroughly. Add the grilled chicken breasts, the green onions and slivered almonds.

This dish has varieties but this is most simple and is delicious served cold but you can heat it up (my dad did by accident one day but it turned out to still be good).

Falafels in Pitta Bread

Ingredients

1 tin chick peas
1 onion
1 clove garlic
1 teaspoon coriander
1 teaspoon cumin
olive oil
pitta bread
lettuce
houmous
lemon

Drain and blend the chick peas until smooth.

Finely chop the onion and garlic and fry in some olive oil until see through and mix into the chick peas with the coriander and cumin. The mixture needs to be firm enough to roll into balls so it may be necessary to add some oil.

Roll into balls and put on a oven tray. Bake in the oven for 20 minutes until golden brown (turning over during cooking).

Slice the pitta breads in half and pop some shredded lettuce in the bottom.

Once the falafels are cooked place on top and put a spoonful on houmous on the top. Is nice served with lemon wedges.

No-Bake Chocolate Peanut Butter Bars

Smothered chicken & veggies.
Sauteed chicken pieces, browned on both sides and seasoned with seasoned salt, garlic powder, and pepper.
Put it in a roasting dish, and pour a can of cream of mushroom soup over it. Throw in a few baby carrots, sliced onions, diced potatoes, and bell peppers in there. Add a half can of water, some thyme, and put the lid on it.
Bake it in the oven until it's done and the veggies are tender.
Serve it up with some white rice and dinner rolls.
mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm!

My favourite recipe:
Marinate some chicken wings/drumsticks in chopped garlic and ginger, and soy sauce (add some water otherwise it would be really salty). Then roast with honey. This makes great finger food/starters/picnic food!

I make a flan which is always a hit at parties.

Classic Flan

Ingredients for caramel:
1/2 cup sugar
1/4 cup water

For custard:
1 cup milk
1 cup half-and-half
1 tsp. vanilla extract or 1 vanilla bean sliced lengthwise
1/3 cup sugar
4 large eggs

Preparation: Place oven rack in center of oven and preheat to 300°F. Grease six custard cups with vegetable oil. In saucepan over low heat place 1/2 cup sugar. Using a pastry brush, drizzle in 1/4 cup water along sides of saucepan. Do not stir sugar. Cook until sugar turns medium-brown color. Immediately place 1 tablespoon of caramel into each custard cup. Set aside to harden.

To make custard: In small saucepan combine milk and half-and-half over medium heat. Bring to high temperature, but do not boil. Add vanilla extract or bean and remove from heat. In bowl whisk together sugar and eggs. Temper egg mixture with 1 cup hot milk mixture. Whisk together and add back to remaining hot milk mixture. Remove vanilla bean pod, if used. Pour mixture into custard cups, almost filling each cup. Place custard cups into deep-sided baking sheet. Pour warm water into baking sheet to reach halfway up sides of custard cups. Bake 20 to 40 minutes until flan no longer jiggles in center. Remove custard cups from baking sheet to cool to room temperature, then place in refrigerator. To serve, run wet knife around inside edge of cup. Place serving plate over custard cup and turn over. Shake until flan separates from cup. Makes 6 servings.
