Try not to cook any more than you have to. Try this one .
Cut smoked salmon into strips. buy some cannelloni beans in a tin. cook some tagliatelle. when hot mix a few ounces of blue cheese, any type will do with the tag. then mix in a few beans and the smoke salmon and mix in some single cream. Serve in small dishes and top off with sliced tomato. Light and delicious.

Any type of soup. My fave is mushroom, using assorted mushrooms, including dry ones, veg, chicken or beef stock, onions, garlic, mushroom ketchup, or worcestershire sauce, mixed herbs - dried or fresh.
Simply saute and then add stock and ketchup. Boil until mushrooms - well, mushy. Cool slightly and then blitz in the processor if you want smooth. Warm up when you are ready to serve adding sour cream or creme fraiche as a side.
Best made the day before and flavours will develop.

Highland prawns - serves 4. 1oz butter, 1 small onion finely chopped, 12oz prawns, 4 tbsp double cream, 2 tbsp whisky, 4 ozs grated cheese, salt & pepper to taste, 1 tbsp parsley chopped. Heat the butter in a pan and fry the onion in it til soft. Stir in prawns & heat through then place in individual ramkins. Pour cream into pan and add whisky, stir over low heat but do not boil. When warmed, pour over prawn mixture and season. Sprinkle with cheese and brown under the grill. Serve hot with brown bread & butter and garnish with parsley. It's yummy!!! (You can substitute the whisky with brandy if you prefer, but I love the whisky version, even though I don't like whisky!)
