1/4 cup all purpose flour
2 tsp salt
1 tsp cayenne pepper
1/4 tsp garlic powder
cooking oil
dip fish in water and roll in above mixture

The best catfish I ever ate was made this way: I caught it, I cleaned it, I stuffed it with some onions, tomato, and a bit of celery. Sprinkled it with salt and pepper and a couple of tabs of butter. I wrapped it in aluminum foil and put it on the edge of a campfire. When I smelled it, it was done. Yummy!
