I like Cajun cuisine.

Louisana fried catfish.
3/4 cup yellow cornmeal
1/4 cup all purpose flour
2 tsp salt
1 tsp cayenne pepper
1/4 tsp garlic powder
cooking oil

dip fish in water and roll in above mixture
fry in oil until golden brown

be careful not to overfry-as this willl make fish tough
really only need a few min (2-3) on each side

serve with tarter sauce, french fries, and put a can of pork and beans in the fridge to chill.

makes a delicious meal!!!!!

Cheesy Mushroom Fish Bake
ingredients
1 pound frozen fish fillets, such as haddock, halibut or cod
2 tablespoons KRAFT LIGHT DONE RIGHT! Zesty Italian Reduced Fat Dressing
1 cup sliced mushrooms
1/2 cup KRAFT Shredded Mozzarella Cheese
1 tablespoon chopped fresh parsley

directions

Preheat oven to 450 degrees F. Place frozen fish in 13x9-inch baking dish; drizzle with dressing.
Bake 25 min. Top with mushrooms and cheese. Bake 5 min. or until cheese melts and fish flakes easily with fork. Sprinkle with parsley.
Yield: 4 servings (Serving size: 4 servings)

The best catfish I ever ate was made this way: I caught it, I cleaned it, I stuffed it with some onions,tomato,and a bit of celery. Sprinkled it with salt and pepper and a couple of tabs of butter. I wrapped it in aluminum foil and put it on the edge of a campfire. When I smelled it, it was done. Yummy!

try the beer batter and coat the fish with flour and dip in the batter and deep fry, yum.. beer batter. 1 cup flour, 1 table spoon oil, and beer. then mix together
