I really never taste ricotta cheese on lasagna.

yes ,that is the way the dish is supposed to be made if you want to be original
I think it tastes much better that way
but to each their own

I don't find that ricotta has much taste by itself, since you typically mix bread crumbs, eggand other cheesees with ricotta to make the filling. (I like using flavored bread chrumbs ).

Rather, ricotta it gives Lasagna filling texture and serves as a carrier for the other ingredients. I have tried with good success to make a lowfat/no fat lasagna using Lo/No fat cheeses and used Tofu inplace of ricotta. Worked quite well and no one complained as there weren't any left overs... :-)

I don't particularly care for ricotta cheese, but I love lasagna so I have found a recipe that has a substitute for it. If you are interested, e-mail me and I will send it to you.
