Ingredients

1 kg Carrots
1 litre Milk
1 teaspoon Cardamom seeds
3/4 cup Water
3 tablespoons Ghee
2 tablespoons Raisins
2 tablespoons Almonds
2 tablespoons Pistachios
450 grams Sugar

Method
Wash and grate the carrots. Soak the raisins in water for 30 minutes. Blanch and shred the nuts.
Put the water to boil, when it starts boiling add the grated carrots. Cook for 5-7 minutes.
Add the milk. Cook on a low flame for 1 hour stirring occasionally.
Add sugar, mix well and cook till the sugar has dissolved and all the milk has been absorbed.
Add ghee and simmer for 2-3 minutes. Add the slightly crushed cardamoms and the raisins.
Mix well. Remove from heat and arrange in a serving dish. Garnish with almonds and pistachios. Serve cold, hot or at room temperature.

Preparation Time: 15-20 minutes Cooking Time: 30 minutes Suitable for: 4 persons Ingredients 10-12 medium sized carrots Dry Fruits: Roughly chopped almond, dates, cashew nuts, raisins or other available dry fruits about 3/4th cup. You can choose dry fruits as per your choice and taste. Sugar, around half cup or according to taste Skimmed milk 2 cups Half teaspoon green cardamom powder Ghee (Clarified butter) 2 tablespoons Cooking Method Wash the carrot properly and peel them before grating it finely. Put a frying pan on gas, heat it. Add the clarified butter in the hot frying pan and when the butter started melting add the grated carrots. Mildly mix it and let the carrot fry for about five minutes without covering the frying pan. After five minutes add the sugar and the skimmed milk in the half cooked carrots. Again cook it further for 15-20 minutes. Now, the lovely gazar ka halwa is ready. But garnish is must. For garnishing sprinkle the roughly chopped dry fruits. In a bid to increase the halwa’s flavour add the cardamom powder. Mix it well and serve it hot.

Carrot Halwa

Ingredients

1/4 kg or 1/2 lb. carrot
3-4 cups milk
2 cups sugar
1 cup butter or ghee
1/2 tsp cardomom pwd
2 tbsp. almond, cashew pista nuts grated
silver foil optional

Method:

1 Cut carrots into one inch pieces.
2 Grind it in the blender with the milk.
3 Cook it in the pressure cooker until it is soft.
4 Transfer it into a microwavable container.
5 Add sugar(you can add more sugar according to taste), ghee and cordomom powder.
6 Microwave the contents for about 15 to 20 mts or until the ghee glistens on the sides of the container.
7 However you have to stir every 5 mts.
8 Sprinkle grated almonds, cashews and pistascio nuts.
9 Garnish it with silver foil.
Voila! Carrot halwa is ready without much sweat!

Hi,
This is the way we make gajar ka halwa:
INGREDIENTS:
1 lb carrot (finely chopped)
½ Can condensed milk
15 tsp sugar
4 tsp ghee
cashew, elaichi
DIRECTIONS:Heat ghee in a pan and stir in carrots.
Continue stirring on medium heat till carrots are cooked.
Add sugar to it.
After the sugar melts and the paste thickens add condensed milk
and stir till it thickens and you feel the aroma.
Add powdered elaichi and cashews.
Halwa is ready.

boil and mash half a kg of grated carrots. add a tin of condensed milk , 300gms of sugar and 6 cardoms mix and cook on an even flame. add a pinch of saffron, plenty of sliced almonds, fried cashew and raisins before removing the thickened halwa from the fire.add ghee as and when needed while cooking. keep aside 150 to 200 gms of ghee for the purpose.--- good luck-- dont worry . start with small quantities.

Ingredients:

Grated carrot 1 kg
Milk 1 litre
Whole dried milk (mawa) 200 grams
Sugar 2 cups
Ghee 2 tbsp.
Dry fruits (sliced almond and cashew nuts, raisin ) 1/2 cup
Cardamom powder 1/2 tsp.

Method:

1. Put milk and grated carrots in a heavy base kadhai / deep saucepan and bring it to boil. Cook over medium heat until all the milk gets dried up. You should stir the mixture occasionally to prevent any sticking.
2. Add sugar, cardamom powder, 1/4 cup dry fruits and continuously stir for 5-7 minutes.
3. Add ghee and mawa. Stir well and fry on low heat until ghee starts separating.
4. Decorate with remaining dry fruits and serve hot. (Optional- decorate with silver leaf)
5. Add lemon juice and paneer pieces. Mix well so that all the paneer pieces gets properly coated with sugar. Allow it to cool.

Its very easy

Ingredients

carrots, peeled and grated
ghee, Desi
Milk 2% or full
sugar
for garnish green raisins, almond and pistachios

Recipe

Cook Carrots in milk after they are cooked well add sugar and cook till it start changing colour. After that add ghee and cook for few minutes. In the end garish with raisins, almonds and pistachios.Serve hot, and the rest of it when cool down refrigerate for the next time.While cooking add cardamom if you like.

Serves: 10
Preparation time: 45-50 minutes

Ingredients:-

-5 cups milk
-1 tin sweetened condensed milk
-3/4 kg carrots
-1-2 tbsp sugar
-2 tsp ghee or butter
-50g nuts/raisins

Method:-

1) Grate the carrots, add to the milk and bring to a boil. Cook on slow fire stirring occasionally, till milk dries up.
2) Add condensed milk and sugar. Cook on slow fire till dry (for about 25 to 30 minutes) stirring occasionally.
3) Add ghee and cook for another 10 minutes.
4) Garnish with nuts, raisins and serve hot.

Micro wave method:
Put half kg grated carrot with little thich milk sprinkled . keep it in high for 5 mts. stir it. Then another 5 mts. Now add 100 gm sugar, 200 gm grated KHOVA, / Mawa. Mix and keep it for 5 mts high. Sprinkle one tablespoon of milk powder for proper binding. add cardomom powder. Garnish with raisins, cashew, pista. !8 mts. yummy Halwa ready.
