The IIR can be made to mimic analog filters, but they can become unstable (oscillate), and can introduce phase distortion.

A continuously adjustable filter is difficult to do with analog circuits since variable capacitors and inductors are needed. Even op-amp synthesized analog filters (which can be made without inductors) are not easily varied because several stages have to be controlled. For a digital filter, all you have to do is to load different coefficients into the multiplier circuits or algorithms.
