I have two for you, both very simple:
Baby lettuce tossed with
Raspberry vinegrette dressing and
Grated asiago cheeze with
Candied pecans &
Fresh raspberries (if available, also great w/out)
Mixed greens with
Sliced green onions
Grated carrots
Annies goddess dressing (or another tahini dressing)
Roasted, unsalted pistachios from Traker Joes
Those salads are huge hits whenever I serve them to anyone and they are super easy!

7 layer salad
tear small head of lettuce into bite size pieces and layer the bottom of a 13 x 9 baking dish.
then layer 1 onion, chopped finely
next spread 1 can sliced water chestnuts
then spread 1 10 oz box frozen peas
carefully spread 1 cup mayo or salad dressing (Miracle Whip) over the top
Sprinkle 1 tablespoon sugar over entire top
Sprinkle with 1 cup shredded cheddar cheese
Place in the refrigerator for about an hour, more if necessary. It will keep for at least 5 hours before eating. When ready to serve, cut through to make it easier to get single servings for everyone. I've had this with crumbled bacon added on the top too, and it's very good, but my original recipe did not include it, nor do I most times that I make it.
It's very tasty, easy and looks nice.

Warm Spinach Salad
1 (7 ounce) bag baby spinach
1/2 cup croutons
1/4 cup white vinegar
1/4 cup water
1/4 cup Dijon mustard
2 tablespoons sugar
2-3 slices bacon
1/4 cup chopped sweet onions
2 cloves garlic, minced
Wash and drain spinach greens well, lighly squeeze excess water from leaves with paper towels.
Blend together vinegar, water, mustard and sugar.
Finely dice bacon and cook in a medium sized saucepan over medium heat until crisp, approximately 3-4 minutes.
Add onion and garlic and continue to cook over medium high heat for 1-2 minutes.
Add the vinegar mixture and simmer 1 minute.
Pour dressing over spinach, toss well.
Divide onto 4 chilled salad plates and sprinkle with croutons.
Serve immediately.

Red & Green Salad
1 bag Ready Pac Spring Mix
1 large California Avocado diced
12 large strawberries diced;
one cup chopped cashews
1 Cup sliced red seedless grapes
Girard's Light Champagne Dressing
Pour Ready Pac Salad in a bowl. Place a row of chopped avocado across the center of the bowl.
Place a row of strawberries on one side of the avocado. Place a row of grapes on the other side of the avocado. Place the cashews on either side of the fruit to the edge of the bowl.
Toss with Girard's Light Champagne Dressing and serve!

Potato Salad
Ingredients
new potatoes
vegan mayonnaise or salad dressing
chives (optional)
spring onions (optional)
wholegrain mustard (optional)
garlic (optional)
Boil enough potatoes for the amount of people that you are serving. It doesn’t matter if you peel them or not (but make sure they are washed). Once they are cooked either leave them to cool if you are going to serve them cold and add the dressing later. If you plan to serve them hot add the dressing immediately.
As the main dressing either use a vegan mayonnaise or salad cream. Depending on the flavour you require add either crushed garlic, finely chopped spring onions, finely chopped chives or wholegrain mustard for a Cajun style dressing.

You can add cooked, drained & cooled pasta to this, if you like (penne, etc.)
Caprese and Then Some Salad
1 tablespoon red wine vinegar
1 tablespoon olive oil
2 tomatoes, seeded and diced
2 artichoke hearts, quartered
6 hearts of palm, quartered
10 mini mozzarella balls
1/4 cup kalamata olives, chopped
1 garlic clove, minced
1 tablespoon fresh parsley
1 tablespoon fresh basil
Salt and pepper to taste
1 bag (10 ounces) chopped romaine lettuce
In a large bowl combine the vinegar, olive oil, tomatoes, artichoke hearts, hearts of palm, mozzarella, olives, garlic, parsley and basil. Season with salt and pepper to taste. Divide lettuce among four plates. Spoon vegetable mixture over lettuce.

The best salad to me is tuna salad. It's very simple. Mix up in a bowl tomato, lettuce, cucumber, and a can of drained tuna. Its perfect for the summer. And you can make it at home anytime.

Seven-Cup Salad
1-cup cpttage cheese
1-cup sour cream
1-cup miniature marshmallows
1-cup pecans, or youre favorite nut
1-cup cocnut
1-cup fruit cocktail
1-cup crushed pineapples
Mix all together and enjoy. If you let it se overnight it is really good. I also put manaidarin oranges in mine, just because I really love them, and it gives it a good tasts.
