GERMAN CHOCOLATE POUND CAKE

2 sticks butter
1 block German chocolate
1/2 c. Crisco
3 c. sugar
5 eggs
1 tsp. baking powder
1 c. milk
1 tsp. vanilla
3 c. flour
1/2 tsp. salt
1 tsp. lemon flavoring
1 c. broken nuts (any kind)

Heat butter and chocolate slowly. Cream together Crisco and sugar. Add eggs, one at a time. Add baking powder, milk and vanilla. Add remaining ingredients. Grease and flour a funnel cake pan, pour in the cake mixture. Bake at 350 degrees for 1 hour. Remove from oven and let set for 15 minutes.

ICING:

1 c. milk (evaporated)
1 c. sugar
3 egg yolks
1/4 lb. butter
1 tsp. vanilla

Cook and stir over medium heat until thickened, about 12 minutes. Add 1 1/3 cups Angel Flake coconut, beat until thick enough to spread.

Directions:

German Chocolate Pound Cake

Partially melt chocolate over hot water. Remove and stir rapidly until melted. Cool. Cream sugar and shortening. Add eggs, flavorings, and buttermilk. Sift together flour, soda, and salt; add to shortening.

Mix well. Blend in chocolate. Pour into a well-greased and well-floured 9-inch tube pan. Bake at 300 degrees for 90 minutes.

Remove from pan while still hot and place under tightly fitting cover until thoroughly cooled. Serve plain or with the following glaze or frosting.

German's Sweet Chocolate Glaze

Melt chocolate and shortening in water; mix in remaining ingredients.

German Chocolate Frosting

Melt chocolate and butter in water. Stir in salt, vanilla, and confectioners sugar.

Glaze Ingredients
2 unsweetened chocolate squares
2 tablespoons butter
1 cup confectioners' sugar
2-3 tablespoons water

Preheat oven to 300 degrees.
Grease and flour a 10-inch tube pan or bundt pan.
Cream shortening at medium speed of mixer.
Gradually add sugar until well mixed.
Add eggs one at a time, beating well after each egg.
Blend in vanilla extract.
Combine flour, baking soda and salt.
Add alternately with buttermilk to the creamed mixture.
Continue mixing well.
Mix in the melted chocolate last.

Sweet Chocolate Glaze (recipe follows)

Grease and flour a 10-inch tube pan. Line bottom of pan with wax paper. Set aside.
Place chocolate in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Let cool.
Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs and yolk, one at a time, beating well after each addition. Add chocolate, mixing well.
Combine flour and next 4 ingredients; add flour mixture to chocolate mixture alternately with milk, beginning and ending with flour mixture. Mix well after each addition. Stir in vanilla.
Pour batter into pan. Bake at 350 degrees for 1 hour and 5 minutes or until a wooded pick inserted in center comes out clean. Cool in pan 15 minutes; remove from pan, and let cool on a wire rack. Pour Sweet Chocolate Glaze over top of cake.

SWEET CHOCOLATE GLAZE

1 (4-ounce) package sweet baking chocolate
1 tablespoon butter
1 egg white
1 cup sifted powdered sugar
1 to 2 tablespoons water
Combine chocolate and butter in top of a double boiler; bring water to a boil. Reduce heat to low; cook until chocolate melts. Cool.
Beat egg white (at room temperature) at high speed of an electric mixer 1 minute or until soft peaks form. Gradually add powdered sugar, beating until stiff peaks form and sugar dissolves (2 to 4 minutes). Fold chocolate mixture into egg whites. Add water, stirring until smooth.
