as in eg if we eat fish the protien if stored and not used in the body how much time does it take to turn into fat

Protien does not turn into fat. It requires too much energy for the body to break down protein.

Carbohydrates are converted to sugar, and can be converted into fat if not used.

If you only eat protein, you will be very tired, and loose weight.
Because the body can easily convert carbohydrates into suger/energy ( ATP), your body craves carbs.

If you limit your carb intake, your body will become more efficient at processing the carbs you do eat. Long distance runners take advangage of this by avoiding carbs before a long run. Then the night before, they eat lots of carbs. The body has become so efficient at processing carbs, that the runner has much more energy than other runners. This is called carbohydrate loading.

Dont just try a protein only diet. It is hard on your kidneys, and if you switch back to a regular diet later, your body will store extra fat in case you try that again. Starvation mode.

Never. Protein is either used to build and repair muscle and tissue. Some might be burned for energy. The excess is excreted. The things stored as fat are fat and carbs. The things most easily digested are used for energy first, like processed sugar, white bread, starches, etc. Then the complex carbs like whole grains, then the fat. Whatever you don't burn as energy then gets stored as fat in case you find yourself in a situation when you can't take in enough calories, then your fat stores are used.
