Vinegar (not white, but almost ANYTHING else!)
oil (olive if you can get it)
salt
pepper
a dash of mustard (brown works best, but yellow will work)
Use 3 times as much oil as you do vinegar (tablespoons, cups, tons, trainloads, lakes, depending on how much you want), a half-teaspoon of mustard per cup of oil/vinegar and whisk well. Season to taste.
Gently drizzle on your clean, dry greens and toss to just barely coat. This isn't a bath, it's flavoring, please don't drown them!
What kind of lettuce? The French tend to eat locally, and will buy whatever is freshest and in season! If there is no lettuce, or it doesn't look too good, spinach, or even parsley are substututed.

"Vinaigrette" - 1 1/4 cups

In small bowl or covered jar, combine all ingredients. Stir with fork, or cover and shake until well mixed. Cover; refrigerate until serving time. Stir or shake just before serving. Serve on tossed greens or over fruit.

Zesty Lime Vinaigrette
1 cup EVOO
2 Tbsp. soy sauce
1/3 cup lime juice (can sub lemon juice or vinegar)
1 tsp. lime zest
1½ tsp. honey
Dash cayenne pepper
Salt to taste
Mix all well.
The French probably eat the same lettuce we do: baby greens, spinach, frisee, romaine....
