smoked meat has been cured by being salted heavily....and then put in a smoke house or smoker for a period of time. once it is 'cured', it will last without spoiling for extended periods of time...days, weeks, months, if kept cool and covered...but not necessarily refrigerated. regular ham has not had this curing process...it is fresh, will spoil quite quickly, needs to be refridgerated, and is probably much less salty.

Regular are brine cured, Picnic are smoked
Location. Location. Location. Ham is taken from the back leg of a pig, and the picnic refers to the front leg or shoulder. Hams are a leaner cut of meat. Picnics have more internal fat. Many people use picnics for preparing boiled dinners or find them a great way to add flavor to other dishes, especially soups and casseroles.

A smoked ham has been hung in a smokehouse to absorb smoked flavor. A regular ham, or a fresh ham, is one that has not been seasoned.

Good question.
Regular ham has been cured (mainly with salt and by one of many different methods i.e. dry cure, sugar cure, brine cure).
Smoke ham has been cured and after the curing smoked in a smokehouse.

"Regular" ham is cured in a salt/sugar brine and can be left in this state. It's pretty bland and rare.
Smoking adds flavor, dries the meat a bit, intensifying the flavor.
Oddly enough, smoking didn't start because man liked the flavor, it began because flies hate the taste of smoke particles!
