Sugar melts at 185 degrees in the oven and yes it would be a bit messy. You could sprinkle them right out of the oven or make a confectioners glaze with the sprinkles and paint or dab it on, I think the right out of the oven way is the best

You should be fine. I'd use red. It will probably make a little bit of a mess, but here's what you do - buy a roll of parchment paper and use that on your cookie sheet. Viola. Does anyone else remember that you roll snickerdoodles in cinnamon sugar before you bake them? The crystal sprinkles are just a coarser grain of sugar (sanding sugar) than regular granulated. The parchment will make it a lot easier to clean up and it's only a few bucks a roll.

it would just make a mess so what you do is let your snickerdoodle cookies bake then put the icing sprinkles ect. and put in oven for 3min.

Yes you can do it before they are baked. Cookies are baked at such a short time, it shouldn't affect the sugar sprinkles.

I would use the red with the cinnamon I don't think the color green would look as good

It would be fine... wouldn't have the cinnamon taste, though.... maybe put cinnamon in the dough instead.
