Classic Butter Cookies:
1 cup butter, softened
1 cup sugar
1 large egg
1 tbsp. plus 1/2 cup milk, divided
1 tsp. vanilla extract
2 3/4 cups flour
1 tsp. baking powder
1/4 tsp. salt
1 pkg. confectioners' sugar
Food coloring and tinted sugar
Preheat oven to 350 degrees.
Beat butter in a large bowl with an electric mixer set at high speed until smooth. Gradually add sugar, beating until light and fluffy. Beat in egg, 1 tbsp. milk and vanilla extract until smooth and creamy.
Combine the flour, baking powder and salt in a small bowl and mix well. Add to the creamed mixture and mix well.
Chill, covered, until the dough is easy to handle, about 1 hour. Roll the cookie dough 1/4 inch thick on a lightly floured surface. Cut with a floured cookie cutter. Arrange on baking sheets.
Bake until lightly browned, about 10 minutes.
Mix remaining milk and confectioners' sugar in a medium bowl. Stir in 1 or 2 drops of food coloring. Spread over cooled cookies. Sprinkle with a small amount of tinted sugar.
Yield: 6 servings

My Aunt Jen (long gone) made the BEST EVER! It seems to me
that she sometimes called them Butter Cookies and other times
she called them Sugar Cookies. I'm sure they were the same; I
watched her make them many times and can well recall what
she said they were made from: "50% Sugar and 50% Butter"
She bought butter in 5 pound crocks from the creamery and the
mix was by bulk, not by weight. Soooo, since a pound of butter
is a pint you would soften it and add a pint of sugar to make the
cookies- - whatever you wish to call them- - Butter or Sugar.
She used a bag with an aluminum cone on the end to squeeze
the mix onto the cookie sheets and I have no idea how long they
were in the oven; she didn't time them; she just knew when it
was time to take them out of the oven. And, boy, were they good!
I gave her a cookie press- an aluminum gadget with a trigger on
it that let her do the job much faster. And when I went to Parris
Island she sent a box of cookies each week- which were confis-
cated by the drill instructor. Soooo, she started sending a box to
him and told him to leave mine alone!

Danish Butter Cookies
3/4 cup butter
1 cup sugar
1 egg
½ tsp. vanilla
½ tsp. almond flavoring
2 cups flour
½ tsp. cream of tartar
½ tsp baking soda
Beat sugar and butter well; add eggs and flavorings. Sift flour, cream of tartar and soda and add to the above. Shape inot balls the size of a walnut; put on ungreased cookie sheet. Press down with a dampened glass dipped in sugar. Bake 350º for 12 minutes. Don't overbake.
