I'm no expert. Even thin people often gain significant weight as they get older (especially in this country). Staying thin is not always the happiest situation. I was very thin growing up and had trouble developing muscle mass.
I'm still slightly below the supposed healthy range for cholesterol, which I might attribute to not eating meat every day and having a dislike for most popular snack foods (no oreos, no cheese puffs, rarely potato chips).
I don't drink soda or alcohol and sometimes skip meals without meaning to. I also attribute my low weight to my sensitivity to stress factors, and my conviction that I can't always afford the perfect meal.
I treat food as a means to mental stimulation (no, I don't necessarily mean caffeine--I'm not a coffee drinker, yet) and an experience to enjoy now and then, only when I'm prepared to appreciate it.
It might be genetic; my father was tall and thin until sometime after college. Maybe I have a small stomach, although I certainly don't eat like a child.
I do a lot of walking and biking (I don't own a car), but only to get from one place to another, not for exercise.
If you want to eat some kind of fat, I recommend fish skin; its great for the brain. When it comes to chickens, cows, and pigs, its my opinion that some are much healthier than others. Chocolate is okay by me, but I avoid artificial flavors (that means no Hershey's).
If I were to write several keys to good health they would be:
1. Good taste
2. A public role
3. Knowing that some ingedients aren't in your best interest--i.e. to put it bluntly they're for stupid people, or people with a death wish. That's essentially what the prof said when I took a class on nutrition. It may sound impolite, but that's part of the reasoning people that are actually healthy use.

My fitness trainer says it is how the body burns calories and the metabolism. I am 25, and have always been skinny. Atheletic but on the skinny side. 6'1 and 165 lbs.
My trainer says my body needs 3300 calories just to keep weight (meaning i will not lose weight from not eating enough)
But i weight train 3 times a week, and I race motocross. I have a hard time gaining weight and muscle because of my high metabolism. I have to put down 4500 calories a day in order to gain an avg of .25 to .5 lbs a week.
Basically it just depends on your body and how it is wired to burn what you put into it and your metabolism.
For Men, they say eating more protien, will kick up the metabolism in those with slower metabolisms and help to keep weight off. For women, im not sure if the same will work?

some ppl are born with the genes of skinnyness. & some have high metabolism. i dont exercise even near enough but im 108lbs & 16yrs old. everyone asks me why that is. some ppl dont eat as much as others. i personally dont eat the typical bad foods. like soda, cake, cookies, candy, ice cream, chips etc are totally disgusting to me so i dont have that problem. however there are more reasons, but i think genes & metabolism & food intake are the top ones

Everyone has different metabalism which affects how fast they burn colories. Some skinny people have a very fast matabalism so their colories don't get stored as fat but get burned off.

One or a combination of various factors
1) fast metabolism, perhaps hyperthyroid
2) low intake

metabolism - their set point is higher than everyone elses, they naturally burn more calories when at rest than the rest of us.
