The trick to a good alfredo sauce is romano cheese along with your parmesan. A friend taught me using this recipe and it tastes EXACTLY like Olive Garden (my favorite)!
1/2 stick salted butter
1 tablespoon minced garlic
1/2 cup heavy whipping cream
1/2 cup half/half
1/2 cup parmesan cheese (grated or shredded)
1/2 cup romano cheese (grated or shredded)
KOSHER salt and pepper to taste
Melt your butter and saute the garlic for about 2 minutes over high heat.
Turn stove to medium/high and slowly add the whipping cream and half and half, stirring constantly, until ALMOST boiling.
When the cream/butter mix gets hot, very slowly add the cheeses.
Turn stove to low/medium and simmer for about 30-45 minutes, stirring often.

Alfredo Sauce
Ingredients
4 tablespoonsButter
1/2 cupHeavy cream
6 tablespoonsParmesan cheese
1 tablespoonFlour
Salt and pepper to taste
Preparation
Combine ingredients in saucepan, cook and stir (DO NOT BOIL) until it looks and feels like Alfredo sauce.
Cook's Notes
Alfredo is NOT just a pasta sauce. I use this recipe to serve over baked chicken. It's also very good when using leftover chicken breast and broccoli florets. Just throw the chicken and broccoli into the sauce and heat! Yummy!

8 oz package cream cheese
1 cup milk
1 stick butter
3/4 cup powdered parmesan cheese or a little over 1
cup grated parmesan
heat over low heat, stirring constantly cream
cheese, add about 3/4 cup milk, stir well, add butter til melted then add parmesan cheese then slowly add the remainder of the milk til desired consistency is reached. This will be a thick, creamy texture and not thin or watery.
stir till well mixed. Drink remaining milk.
serve over noodles
This is a fantastic recipe, it tastes delicious every time. It actually tastes better than restaurant alfredo sauce. Make sure you prevent as many lumps as possible. While lumps do not make the recipe bad, they are visually detracting.

Alfredo is a simple Mornay variant using Parmisan cheese. A stick of butter, a cup of cream, a cup of Parmigiano-Reggiano if you can afford/find it, pepper to taste, in order, over low-to-medium heat. So simple it's hard to fugure how they sell all that stuff in jars. But not exactly low-fat.
