Lettuce is fast, but some beans have short growth periods, 45 days or so, which is only a month and a half.

I am not scientifically accurate most likely because there
certainly is "something"classified as a vegetable that takes
the least time to grow other then what I am going to put
It could be some leaf or root all the way in Africa or Brazil for all
I know,but in my experience with gardening I
would say the vegetable that grew the quickest everytime.
(under the right conditions) were radishes.then again there is bean sprouts (Are they a vegetable?) Well anyways,,the
fact of the matter remains depending on conditions,environment Some plants can grow at a blink of an eye of any vegetable
species or manipulated to under the "best conditions"So
that on a larger scale it would all depend..And also within
the class of vegetable.But in my experience "radishes" do
well.Actually most roots due.So the question depends on maturity.Take for instance a carrot seedling will sprout .
You might only see this little sprout but underneath the soil
there is this teeny weenie carrot ,Fully formed only tiny.

most rapid growing plant/gras is bamboo and young bamboo shoots are used as vegetables in chinese style cooking.. !
when all conditions are ideal beans and tomato start blooming within 3 weeks, personal experience..

radishes produce the fastest crop that will mature to a size to be edible -- unless you consider sprouts, etc.

Radishes, lettuce, asian greens (Bok Choy, Gai Lan (sp?)), cress, and chard.
