What does this prove?
It proves that the person that created everything from nothing does not find it hard to create wine from water.
If you are not sure that Jesus created everything read the first chapter of the Gospel of John.

It doesn't necessarily "represent" anything. The people needed more wine for the wedding -- it was considered a great embarassment to run out -- and Jesus, out of love, provided them exactly what they need.
As far as the previous comments about alcoholism, it should also be noted that wine was often consumed in those times as a common, everyday drink, due to lack of drinkable water.
