The very easiest way to make a good cheese soup is to buy pre-chopped onion, bell pepper, celery mix in the produce department. Cook it down in butter with a little garlic until it is very, very soft. You could even put it in a blender afterwards, because cheese soup should be smooth with no "pieces". But if you cook it down long enough that will be good enough. Then you can EITHER:
1. Add 2 cans of Cambells Cheese Soup, using cream instead of milk
OR
2. Pour in chicken broth, heat to a heavy simmer (just below boiling), and a little at a time add shredded sharp cheddar and monterrey jack, stir until melted, and add cream.
Then when you serve it put a large spoonful of room tempature shredded monzarella in the middle.
Don't forget salt and pepper!!! I also like just a tiny bit of cayenne pepper. I haven't given measurements because I don't know how much you want to make, but don't let that scare you. Just make sure you have a little extra cheese/cheese soup and add until it's the way you like it. Good Luck!

INGREDIENTS

1 Polish kielbasa (or other cured sausage)
6-8 potatoes
2 cans cheese soup
1/2 cup salsa (or more)
instant mashed potatoes

DIRECTIONS

Cut potatoes into bite size pieces.
Cover with water, (no salt!) and boil till tender.
Cut the Kielbasa into bite-sized pieces.
add cheese soup,Kielbasa,and 1/2 c.
(or more) salsa to potatoes.
Add a little more water if needed, and return to a simmer for 10 minutes.
Add instant potatoes to thicken- 1/2 cup at a time.
Simmer 5 minutes.

EASY CHEESE SOUP

1 qt. water
1 c. diced onions
1 c. celery
4 chicken bouillon cubes
2 1/2 c. diced potatoes
1 c. diced carrots
1 (20 oz.) bag of frozen diced mixed vegetables
2 cans cream of chicken soup
1 lb. Velveeta cheese

Cook first 4 ingredients for 20 minutes and then add potatoes, carrots and mixed vegetables and cook for 30 minutes or until vegetables are tender. Then add cream of chicken soups and Velveeta cheese. Heat until cheese is melted. Keeps well in refrigerator.

INGREDIENTS:
2 cans cream of celery soup
1 cup beer, any kind
16 ounces shredded Cheddar cheese
1 tsp. Worcestershire sauce
1/4 tsp. paprika
croutons or toasted baguette slices
PREPARATION:
Put all ingredients in slow cooker except bread or croutons; cover and cook on high 2 hours stirring occasionally.
Top with croutons or baguette slices just before serving.
For variety add 1 cup steamed fresh broccoli for a broccoli-cheese soup.
