How about Chicken Parmesan?? All you need is boneless skinless chicken breasts, sauce and mozzarella cheese and some Parmesan cheese. Cut off any fat at the edges of the boneless chicken breasts, wash them and lightly season them with an all purpose type of seasoning for poultry. Bake them (uncovered) at 275 until completely cooked, 20-30 minutes. For the sauce use any kind of jarred sauce like Ragu or whatever you normally use. Add some spices like oregano, garlic and whatever spices you would normally use for a spaghetti sauce. When that is done (spices simmered in) then just spread the sauce over the chicken breasts and top with lots of mozzarella cheese and a little Parmesan on top. Bake at 275-300 until the cheese is really melted. Broccoli goes really well with this and maybe some garlic bread and a bottle of nice wine. It is really yummy and doesn't take long at all and pretty hard to mess up. Good Luck!

You could do a simple pasta dish, like spaghetti. Or, you could go to the grocery store, and buy some ready made ravioli in the refrigerated aisle, a good marinara sauce, and the ingredients for a salad. OK, so the tossed salad is the only thing you are actually doing, but this could be a nice dinner. Plus your risk for disaster would be low.

Chocolate Lover's Cheesecake

1 1/2 cups finely crushed chocolate wafers
6 tablespoons butter, melted
3 8-ounce package cream cheese, softened
1 1/2 cups sugar
2 tablespoons all purpose flour
1/8 teaspoon salt
4 eggs
4 squares (4 ounces) semisweet chocolate, melted
1/4 cup milk
1 teaspoon vanilla
1 square (1 ounce) semisweet chocolate
1 teaspoon butter
For crust, in a bowl combine chocolate wafer crumbs and melted butter.
Press crumb mixture firmly on bottom and 1 3/4 inches up sides of a 9-inch
springform pan.
For filling, in a large mixer bowl beat cream cheese till creamy. Combine
sugar, flour and salt; stir into the cream cheese mixture. Add eggs all
at once. Beat just till combined. DO NOT OVERBEAT. Stir in the 4 squares
melted chocolate, moik and vanilla till combined. Turn into crumb-lined
pan.
Bake in a 325 oven for 60 minutes or till center appears set. Remove from
oven; cool 15 minutes. Loosen sides of pan. Cover and chill at least 2
hours.
In a small saucepan over low heat melt the 1 square semisweet chocolate
and butter. Drizzle in lattice design atop cheesecake. Chill till
chocolate is set. Makes 12 servings.

Place some chicken breasts (1 per person) into an ovenproof dish with broccoli and carrots. Mix a can of Campbells chicken soup according to the label and stir in a pinch of curry powder, then add to the chicken and veg. Bake in the oven for 45mins to an hour on 190C. Serve with jacket potatoes. Yummy!

CHICKEN WITH CUCUMBERS
2 tbsp. olive oil
1 tbsp butter
3 chicken breasts
1 large cucumber
1/2 an onion, sliced thin
1/2 tsp. ground cumin
1/2 tsp. ground mustard
2 cloves garlic, minced
1/2 cup chicken stock ( 1/2 cup water and 1 chicken boullion cube works too)
3 tbsp. sour cream
Heat oil and butter in skillet. Add chicken to pan, cook thoroughly. Take cucumber and peel, slice in half, seed with a spoon and dice small. When chicken is cooked golden brown, remove from pan. Add onion and cucumber. Cover and cook 1-2 minutes. Add chicken stock, garlic, cumin and mustard. Cook 5-7 minutes more until onion and cucumber are tender. Stir in sour cream. Serve cucumber sauce over chicken.
Rice Casserole
Melt 1 stick of butter in a casserole dish with lid.

one cup of uncooked rice
1 can of campbells french onion soup
1 can of cambells consume beef
Mix together cook in oven at 350 for 45min to 1hr until almost dry.
GREEK SALAD
Kosher salt and freshly ground black pepper
4 tomatoes, seeded and cut into chunks
1 medium red onion, sliced thin
1 medium cucumber, sliced thin
1/2 pound feta cheese, crumbled
1/2 cup kalamata olives, pitted
1 head romaine lettuce, torn into bite size pieces
1/3 cup Italian dressing
Salt and pepper the tomatoes, onion and cucumber. In large bowl, toss tomatoes, onion, cucumber, cheese, olives and lettuce with dressing and serve.

Beef Pot roast.
Get yourself a good beef roast. Ask your butcher for advice on picking on out. Tell him/her your makeing pot roast.
1-Lipton Onion soup mix packet
Assorted veggies. (chunks of carrots, celery, onion, potatoes, mushrooms)
Place roast in over proof dish. Something with med/high sides. Add assorted veggies. Add water enough to cover the roast and veggie. Sprinkle in the onion soup mix. Cook at 350 for about 1-1.5 hours. Just check for tenderness.
He will love it! Men dont' want alot of hassle when it comes to meals. They just want good food. Trust me.......he will be raving to all of his friends about this dinner.
