Buy the envelopes of dry Italian salad dressing mix. Sprinkle it on the leg quarters.

Put them in a pan, and cover with foil. Cook for 30 minutes at 350 degrees, then remove the foil and finish cooking for another 30 minutes.

Make some boxed noodle dish (pasta roni or something like that) for a side and micro-nuke some frozen veggies.

Oven on 425. Cut up basic vegetables... onion, carrot, celery, tomatoes, whatever you have, all in medium pieces. zuccini and squash are good too and you can even add potatoes chopped up. Try to keep everything the same size. Put in a ziploc or clean plastic bag and add some olive oil salt and pepper, and whatever dried herbs you have in your cabinet. Toss in the bg until evenly coated. Dump out into a small roasting pan, then season the chicken in the same way, put the chicken on top, and cook in the oven for about 45 min until done. Squeeze some lemon over if you like. Good luck!

Firecracker Drumsticks
8 chicken drumsticks
1/4 cup hot pepper sauce
1/3 cup all-purpose flour
2 tablespoons yellow cornmeal
1/2 teaspoon salt
3 cups vegetable oil

To Marinate: Remove skin from chicken and place in a resealable plastic bag. Pour sauce over chicken, seal bag and refrigerate to marinate for at least 1 hour, up to 24 hours. The longer the chicken marinates, the spicier it will be. In another resealable plastic bag combine the flour, cornmeal and salt. Add chicken, seal bag and shake to coat. Heat oil in a large, deep skillet to medium high heat. Add chicken and fry, uncovered, for 25 to 30 minutes or until juices run clear. Turn occasionally to brown evenly.

Salt and pepper and Brown leg quarters in butter or margarine get them very brown. Pull them out and add 3 tablespoons of flour and stir around so the flour soaks up the oil and dripping.

Turn heat on high ad 1 cup cool water. Stir around. You can add a cup of chicken broth or stock, some garlic or onions, put chicken back in cover and simmer until cooked and thickened.

Serve with rice, noodles or cooked boiled potatoes.

Smothered chicken.
Wash and season your chicken with seasoned salt, garlic powder, and pepper. Saute the chicken in a small amount of canola or olive oil until browned all over. Lower the heat to simmer and pour a half cup of water in your skillet and put a lid on it for 10 minutes. Add sliced onions, and let it continue to cook until it is done. Serve it with whatever veggies and sides you like.

You have the fixings for a really great soup. Remove the skin from the chicken and add the carrots and some onion if you have it and boil until the meat falls off the bone. Strain the liquid and keep it. Add all the cooked chicken to the pot. Cook the noodles and add to the soup. Add veggies and cook until soft.
