There isn't really a term for 'Happy holidays' because it's plural. We have a term for 'Happy holiday', so to speak, which is what the first answer listed here says- "chag same'ach".

Happy Hannukah would be "Channukah Same'ach" (Same'ach means happy. Chag would be 'holiday', and so really, you could also write "Chag Channukah same'ach" and it would still sound ok.)

Merry Christmas is also something we don't really have an official term for. I guess you'd say "Chag Molad Samea'ch" (Chag HaMolad means Christmas.)
