When I served on small ships, the Captain would sometimes salute me. This is because I was the Cook, and thus, the "second most important person in the ship". If you are cooking for 30 or 40 people, and turning out different meals appropriate for ODs, POs and the Wardroom, and often working from 05.00 to 22.00 (with breaks), you become either respected, or loathed. I was only a Leading Rate, but I could drink in the POs mess whenever I wanted to.

The courtisy is if you are in uniform you still salute an officer you recognize in civies. If you are in civies, nothing is required except a verbal greeting. I.E. Good morning Sir!

If you or the officer are in civillian attire you do not have to stand at attention or salute...however, out of respect (and partially out of habit)most servicemembers do it anyways.
