What do you think would happen if we never stopped growing? We have to stop sometime and once the body has reached the age of adulthood, or within that range, the body stops, plateaus, then starts reversing. Until someone discovers the fountain of youth, there is nothing we can do to stop it.

The epiphyseal plates (the end of long bones) are sealed (form caps), due to the effect of estrogen, by the end of adolescence.
