My husband and i are debating... if a jar of mayo is opened and then put back in the fridge.. does it spoil? and how long until it spoils and becomes no good to eat? thanks

I am not sure of the life span of mayo, but yes it will spoil. It does take longer in the refer then sitting out on your counter.
If a sandwich is made with mayo and sits to long it will spoil and give one a nasty tummy ache.

Yes, but it takes a very long time unless you do what my father daes and lick the spoon and then put the spoon back into the jar for a second helping. There is not much nutrient in mayo for the bacteria to live in. Fat was once used as a perservative. Altering the condition in the jar like adding moisture will help bacteria to grow. Some fats last longer than other, but unfortunatley the ones that are really bad for you last longer than the one that are good for you. This means the lifespan of mayo will alter depending on the type of oil it is made of. Lookin at the experation date will help, but the expiration date is a suggestion more than something written in stone. Its a meean for food company to protect themselves. You could tell by the taste, smell and appearance. I have used mayo long after they expired, but its not an endorsement or a suggestion. Key to prolonging the lifespan of mayo is to put it in the back of the fridge, not in the door. Keep soy sauce and the less perishable on the door.

Everything spoils eventually. If a jar of mayo is opened and left it the fridge (which is where it is supposed to go), I think you can get a good year out of it...but please use your judgement and don't use mayo that smells funny. A good estimate for me would be about 6 months. A year might be pushing it.

I have never known Mayo to spoil however it is usually used up within a month. I think that it shouldn't be kept much longer after the expiration date no matter what. It is so cheap and not worth taking the chance of eating it and getting so sick you want to die.

Yes it will spoil. There should be a date on the label or cap somewhere.
