This is really easy and inexpensive. Buy some pita bread and slice into little triangles. Throw them on a pan, drizzle some olive oil and spices (if desired; I like cumin) and bake in the oven until crispy, golden brown. Then use any dipping sauce you'd like (onion dip, tahini, or just eat them plain). Great alternative to potato chips and taste good. You can also make a platter of crackers, smoked salmon, cheese (smokey is so good) and pastramis. A little more expensive but very tastey. Good luck and have fun!

Spanakopita ( Greek spinach & Feta pies)
Go to the freezer section of your grocery and get some pyllo pastry frozen
Then mixed up this spinach filling:
2 packages chopped frozen spinach cooked 5 minutes each in the package in the microwave and then drained and the water pressed out of them with your hands pressing down on them while they are in the collander. Try to get as much water as possible out of them
Or 2 cups fresh spinach chopped of chiffonaded and sauted in the olive oil
1 teaspoon olive oil
3 green onions, chopped
2 tablespoons fresh dill, chopped or dried dill weed
4 tablespoons feta cheese, crumbled
2 eggs, beaten
salt, to taste
black pepper
1/4 cup butter (melted)
1 pinch ground nutmeg
Heat oil in a saucepan and add onion, spinach and dill. Cook on high for 3 minutes until onions soften. Remove and cool. Combine the cooled spinach mixture with feta, eggs and salt and pepper. Set aside.
Cut the phyllo dough in small squares (keep a moist cloth on the dough you are not using because it dries easily)
Put a sab of the filling in the middle of the square and crimp the dough around the filling - sometimes I make it into triagles
Plase on ungreased baking sheet
350 oven for about 10 mins
Brush tops with a little more butter. Place triangles on a baking sheet and bake for about 10 minutes until golden.
People devour these and they will rave because these little pies look so much harder to make than they actually are.
