you boil it on high for 3 hours?

Hi, first of all I don't eat pig feet, but my fiance' does. He is boiling the pig feet on a high temperature all the way and he thinks it's okay to do this. I read on the internet that you're supposed to bring to a boil, THEN simmer for 3 hours. IF he does it his way, what will happen, will it be tough or worse?

No, it will be tender and also the gelatinous proteins in the "trotters" will break down to form a smooth silky broth and make a fine jelly when cooled.

It will be a little tough, but hard boiling will cook most of the flavor out of them. Place pigs feet in a pot of cold water, bring to a rapid boil for 5-10 minutes, then simmer on low heat for 2-3 hours. When the meat comes apart easily with a fork, they are done. I like to use pigs feet in pinto beans or split peas...just pop them in with the beans and let them cook slowly. This imparts a nice flavor to the beans and the meat is really tender.

Your right ! boil then simmer. It should'nt matter, he'll have to add water when it boils away

when you simmer it for a long time it becomes really tender.also you need to season it to your taste.my mom grew up on it so she knows.
