Absolutely delicious and can't get any easier! I just made these for the first time last week to give as gifts to the neighbors. Well, I ate them. So I am hoping the next batch will last! Don't be afraid of the crackers. It makes it like a crunchy wafer middle surrounded by chewy caramel, topped with chocolate and nuts! Yummo!

These will not last I promise you that. I have people ask me to make these every year.

Corn Flake Candy

1 2/3 cup Corn Syrup
1 2/3 cup sugar
Boil until sugar is melted, remove from heat, then add
1 2/3 tablespoon vanilla
2 1/2 cup peanut butter

In a big pan that is coated with butter, put in 10 cups Corn Flakes.
Pour the above mixture over the Corn Flakes and stir with a large spoon that is coated with butter. I have even coated my hands with butter for the last of them to be put on wax paper so not to burn my hands as it is still very hot.
Stir until Corn Flakes are covered. Spoon out on wax paper and let cool.

You can substitute mint extract for the vanilla in your choc chip recipe...mint choc chip cookies. Very holiday.

You can do kisses or choc stars on top of the peanut butter cookies.

You can do sugar cookies with colored sugar or sprinkles on top.

Make your dough in huge batches. You can freeze it ahead of time, and you can bake them off and refreeze as you have time. You can also shape dough into tubes and do your own slice and bakes before freezing.

Raw sugar makes the best cookies. Sub it for white sugar. And then there may be some that would like their cookies sweetened with Splenda.

You can do oatmeal with cinnamon or peanut butter chips instead of raisin.

Molasses and gingerbread.

You could play around with Oreos and other readymade sandwich cookies. Dip in choc sauce, etc. Very elegant when you dip half in white chocolate.

Don't forget other easy to do foods for large numbers of people:

Puppy Chow
Chex Mix
Choc dipped pretzels
Rice Krispie treats. Try subbing any other kind of cereal to jazz it up. You can also make Smore treats with Golden Grahams, milk choc chips...follow the same recipe as usual, and add the chips after the marshmellows have cooled down so they don't melt, can add a few whole mini-marshmellows after they cool too.

Everyone loves home made chocolate chip cookies. Make some with walnuts and some without walnuts. My mom used to spend a whole weekend making chocolate chip cookies and she would ship them in big tins to me, my sister and my niece. I sure miss those cookies (& my mom of course). My daughter and I are going to bake together when I go to visit her next week. Have fun and good luck.

PEANUT BUTTER BLOSSOMS

INGREDIENTS:
8 oz. pkg. milk chocolate kisses
1/2 cup solid shortening
3/4 cup peanut butter
1/3 cup sugar
1/3 cup light brown sugar
1 egg
2 Tbsp. milk
1 tsp. vanilla
1-1/4 cups flour
1 tsp. baking soda
1/4 tsp. salt
more granulated sugar

PREPARATION:
Heat oven to 375 F. Remove wrappers from chocolate. Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup sugar and brown sugar; beat until light and fluffy. Add egg, milk and vanilla; beat well.

Stir together flour, baking soda and salt; gradually beat into peanut butter mixture. Chill for 1 hour in fridge.
Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet. Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate piece into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely. Makes about 48 cookies

To freeze, shape dough into balls but do not roll in sugar. Place on waxed paper lined cookie sheets and freeze until firm. Pack into hard sided freezer containers; label, and freeze up to 3 months. To bake, roll frozen dough into sugar, then bake as directed, adding 3-6 minutes to the baking time.

You could use Hershey Kisses w/peanut butter inside too or instead if you wanted too. These are my favorite cookies. Combination of peanut butter cookies and chocolate chip. Pretty much all they are is peanut butter cookies (with CREAMY peanut butter) rolled in sugar, then bake them and stick a hershey kiss in the middle before they cool completely. You can't go wrong.

Just make sure you stick the hershey kiss in the center before they cool completely but wait a couple seconds so they don't melt too fast.
