Is it French, or Isle of Wight smoked garlic? The IOW stuff is much better, IMHO.

Peel it, use to stuff a chicken. Chop finely and make garlic butter. The IOW stuff can be eaten "as is" - the smoking changes the texture, making it softer and almost waxy, and mellowing the flavour. It's even infused in honey, which is then used to make ice-cream - believe me, it's not just edible, but really good stuff!

Anything you would do with garlic! It is just milder and adds a delicate smoked taste to your recipes.

It is very popular in the north of France. They use it for cooking meat, and / or mixed with potatoes.
