I see that Portabello mushrooms are sold minus the stems (really love these!), but the white mushrooms have stems. In the past I've kept them in dished I cook...
Safe?

Good question. The stems should be perfectly edible.
they do tend to be coarses grained than do the smooth caps;
but they taste only a little stronger. Slice them thinly and
across, into rounds, or eat them while preparing the rest
to asses your mushrooms for age, flavor and so on.

And be sure to wash both stem and cap thoroughly before preparing.
I always include them when sauteeing musrooms or in any
the ordinary salad or omelette.

RE:
Is it OK to eat the cooked Mushroom stems? Or should they be removed, cooking/eating only the caps?

Yes,
It is Ok to eat the mushroom stems. Some people prefer use only the tops or caps. A lot of times this is done for presentation.

If you don't like the way the mushrooms look with the stems then don't use them.

If stuffing mushrooms- use the stems in the stuffing mixture.

When making stuffed mushrooms, the stems are commonly chopped up and added to the stuffing mixture. Contrary to what one of your other answers says, do not wash mushrooms - they act like a sponge, soaking up the water. Instead, just give them a good but gentle wipe with a damp paper towel, or brush them with a soft vegetable brush.

Yes, white mushroom stems are fully safe. Ive been eating them for centuries. You might wish to shave the bottom end off first because they get dry at the ends...

It is just fine. I have always eaten them. Of course, be sure to only eat mushrooms obtained from a reliable source, such as a grocery store or supermarket.

Surprised nobody on here has said to lay mushrooms upside down and leave in sunshine for 60 minutes so they absorb VITAMIN D! It works so do it.

How much food is she taking away? Cooks tend to take food because they see it as 'perks' of the job. If she's an amazing cook, then you can reach a compromise on how much food she can take. If you stop her completely from taking food, she may start to resent you without you knowing it. I wouldn't want the person handling my family's food to resent me.
