Taking vitamins without veggies is better than nothing at all, however it would be better for your gf to get her nutrients from food. A lot of vitamins need other nutrients to be properly absorbed and stored in the body (eg: calcium needs vitamin D and fat soluble vitamins need lipids). You should encourage your girlfriend to continue to take the vitamins but also eat a balanced diet. Even if you can find a couple of fruits or veggies that she's willing to eat, it's better than none at all. Let her know that it's not only her health that you're worried about, but that of your baby as well.

Vitamins are good, but here's a few other things you can try.
Get a juicer, make fresh orange/apple juice. You can totally sneak a carrot in without it tasting like it.
Also, you can make a really good salad with cut up apples, grated carrots, raisins, walnut pieces, and mix it with vanilla yogurt and honey.
Feed her zucchini bread or carrot cake
make nachos with lotsa guak and salsa!
if she won't eat veggies, push more fruits. If she'll eat a bit of veggies, go for raw ones.
I tend to eat over 70% raw friuts and veggies all the time, yet found that for the first few months of my pregnancy that I hated vegetables. For me, it passed. If she never eats veggies even when she's not pregnant, you should get her to a nutritionist, or enlist some other help, because you do not want her passing these bad habits on to the kid.

I would just let it be most pregnant women get cravings because there body is telling them they need something that is in that particular type of food. If she isn't craving vegetables then her body my not feel like she needs that in her diet right now. I would be worried however if she was trying to ignore those signals that her body is giving her. Be very careful with vitamins though allot of vitamins can do more harm then good if you're taking to much.

Ok..be careful with the vitamins because you don't want to give her an overdose of vitamin A, and some others. If she doesn't want to eat vegetables..she could try to drink some V8. It is best to receive vitamins and nutrients from foods.

Vitamins will help, but I'd still ask her to eat veggies. It's your child, too.
She needs nutrition education.
