"Buddy" usually is used to express affection to a male in a socially acceptable way.
I don't think calling a guy "man" is out of a need to confirm his gender. Isn't gender obvious, at least most of the time. It is more of a compliment, an expression of respect (when used with good intentions).
Why do females call each other "lady" or "woman" or "girl" or "gal"?
By the way, to answer a "Why" question is to offer a guesstimate. How could anyone answer "why" with perfect accuracy? Ever? It usually involves a guess as to what motivates people, and therefore can only be generally accurate.

gd question! I think its just a colloquial thing. I didn't know that buddy refers to males like "dude" does for example though? Words go in and out of fashion all the time.

Why do people in restaurants always refer to couples who are men or women or mixed as "guys"? It doesn't matter if the server is a man or woman. All of them do it. There is no courtesy anymore.

I don't think we ever call our friends this, it's just more words to use when we don't know someone's name and we need to get their attention. "Buddy" and "man" are better than "you" right?
