Any suggestions on how to make a loaf of bread last to its maximum shelf life? I'm a single guy and usually end up with a bag of mold long before I can reasonably consume it.

The best way is to freeze it. I sometimes freeze bread in packages of 4 slices in freezer ziploc bags as we often have several varieties of bread on hand. This will also preserve a great deal of the freshness.

You could store it in the fridge to prevent the mold, but the bread will lose its freshness.

I've cooked as a single guy for 14 years and love my sandwiches. I would take my loaf of wheat bread and pop it in the freezer. I can just reach in and take off the slices needed for a sandwich... it thaws in 10-15 minutes, or you can toast it briefly.

That will give you it's MAX shelf life... a month or two. I do the same with hotdog and hamburger buns.

All good advice about freezing it. ( I'm single and I never eat all my bread before it goes stale either ) Something else I like to do with my bread if I find it's gone a bit stale before I eat it all is make croutons. Just brush both sides of the slices with a little melted butter, cut in cubes, if you like season with a little garlic powder, and bake at a low temperature until light brown and crispy. I keep mine in my fridge in an airtight bag or container. They'll last quite a long time and you'll have croutons handy for salads, or to garnish a bowl of soup. I think they taste a lot better than storebought too!

Freeze it. This is the BEST way to keep bread. And for some reason the bread seems to toast better after being frozen.

I don't like the taste of bread after it's been in the refrigerator or freezer.

I buy the smallest loaf of bread there is for toast and peanut butter. For sandwiches, I buy sub rolls, kaiser buns, or hamburger buns.

Put it in the freezer.

It will last over a month without the flavor or texture being affected.

To thaw it, leave the slices on the counter for about 15 minutes.

i buy food just for me too and i know what you're talking about. take some bread, like what you'll eat in a few days and seperat it from the rest of the bag. just freeze the rest and it defrosts and tastes fresh as when you froze it. freezing is my trick for pretty much everything

If you get more then one loaf put the other loaves in the freezer and the one in use in the fridge

Emulsifiers help prevent staling. Don't put it in the fridge - that will speed staling. If need be, put it in the freezer, that will slow down staling.
