I have developed a new fair food and am looking for some guidance in the field. I have done a handful of events with outragous success and can see that I will need some help. I have been accepted in every venue that I have applied for with waiting lists for years and I cannot keep up with quantity. Im making them by hand for now but am looking into having them produced at a factory, possibily frozen and boxed and to my suprise they seem to be as excited as I am about producing them at thier factory.Am I moving to fast? I am in over my head and need some guidance.

Start by looking into producers. Have you a patent for your product. You really need to contact an attorney for guidance. If you do not protect nyour product, someone with the knowlege and means will snatch it out from under you. If it's that good a product you'll be willing to spend what it takes to mass produce it.

Research food production plants in your area.
