Don't you hate it when you pour out the powdered hot chocolate or cocoa mix onto your hot water, and it just sits there on top? And even when you use your spoon to force it under, it pops right back up and looks just as dry as before you dunked it. Why does it do that? I looked at the ingredients and didn't see anything out of the ordinary. Any ideas?

Chocolate powder is hydrophobic because of surface area. Anything with a large surface to weight ratio will float in water. That's how you get battleships made out of steel to float on the ocean.

For better results place the chocolate powder in the bottom of an empty mug. Then pour a little of the water over the chocolate and stir. This way the ratio of water to powder is more equal and the chocolate has less of a tendency to float before it dissolves. Then add the rest of the water. Works every time.

All Chocolate IS hydrophobic!!! I have taken chemistry etc. and if you look at the molecules you can figure out if something is hydrophobic or hydrophilic. ALSO , you can tell from experience of trying to melt chocolate, if it gets annny water in it then it all goes badly from there! Keep being curious and hopefully next time the "best answer" will actually be factually correct!! Haha

... all good reasons are stated above.
to avoid the results, you can put the choc powder in the cup, add 3-4 spoonfuls of liquid, and stir into a paste. then add the rest of the liquid.. no surface powder like this.

I hate that too! Oh man that crap pisses me off! Its not the ingredients involved, its actually just the surface tension of the water. Have you ever seen the little skeeter bugs that skim across water? Its because their legs have tiny particles that, when weight is distributed evenly, can walk on top of the water.

well, if you can somehow put it into a container and shake it, it really helps. "Shaken, not stirred."
