when we were kids we called them Chinese Fighting Ducks...but surely that wasnt there real name....plus i never actually saw them fighting....what were they

They are a breed from China, but the proper name is Muscovy... the red isn't on their beaks though, is it? More like around the beak and all over the head for the males. A little red around the beak and eye areas for the females.

I'm wondering if you mean Mandarin ducks (aix galericulata)? The males have very striking black and white markings (although they have other colors as well), and red bills. The females are far less colorful, but also have some black and white markings.

Are they really ducks? Could they be coots? In Louisiana, we call the "poo-doos". They usually hang around where ducks and geese are at also.
