I use a mix of hot and mild sausage, 1 1/2 lb hot sausage and 1/2 lb mild. And sometimes I use 1 lb hot, and 1/2 lb sage and 1/2 lb mild.

1 lb ground pork sausage hot
2 cups biscuit baking mix
1 lb sharp cheddar, shredded

1 - Preheat oven to 350
2 - Combine all ingredients in a bowl. Form walnut sized balls and place on baking sheet.
3 - Bake in oven for 10 minutes, until golden brown.

Tips:
*If you have trouble getting the balls to stick together, add 1 egg to the bowl and mix it in with the other ingredients.
*If they come out of the oven looking a little dry, let them cool in a tupperware container with the lid on. That will put the moisture back into the balls instead of into your kitchen.

Good luck!!
