Stilton has a strong flavour....you don't need much extra apart from a good veggie stock onion and lots of flat-leaf parsley. Keep the brocolli green and pre cook it before adding it to the soup so that it keeps the bright green colour. It's best put in the whizzer ..Dolcelata is probably to creamy...Stilton will crumble and mix in better. You can also try it with Gorgonzola...or Danish blue, they have a better texture to be turned into soup. If you need any help with Numptie reccipes...give me a shout...I'm a chef.

Here's my recipe;
1 large onion, chopped and softened in a little olive oil add 3 large heads of broccoli cut into small florets. Add 2 pints of really good stock (I use chicken, but vegetable is great for vegetarians) allow this to simmer for about 15 minutes, or until the broccoli is soft.
Cut some stilton into small cubes and add to the broccoli stock and a little salt and pepper (not to much salt the stilton is quiye salty) I like to add a little mixed herbs. Now blend the entire mixture until smooth, return to the heat and bring back up to serving heat, turn off the heat and stir in a quater pint of double cream, serve with parmesan shavings on the top.

Ingredients
2 tbsp olive oil
1 clove garlic, chopped
½ onion, sliced
30g/1oz butter
1 handful grated potato
290ml/½ pint vegetable stock
½ head broccoli, chopped
75g/3oz stilton, cubed
85ml/3fl oz double cream
1 tsp thyme, chopped
Method
1. Sauté the garlic and onion in the butter and oil for 2-3 minutes.
2. Add the potato and stock and simmer for 7-8 minutes until the potato is tender.
3. Add all the other ingredients and simmer for 2-3 minutes.
4. Blend the soup in a food processor.
5. Pour into a bowl and serve.

INGREDIENTS
1 onion, diced
1 tablespoon olive oil
2 heads broccoli, chopped
2 potatoes, peeled and cubed
4 cups chicken broth
4 ounces stilton cheese
DIRECTIONS
In a large saucepan over medium heat, cook onions in olive oil until translucent. Stir in broccoli and potatoes and cook until vegetables begin to release their moisture. Pour in chicken broth, bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes. Remove from heat and let cool slightly. Stir in cheese until melted.
Puree soup in a blender or food processor or with an immersion blender

Serves 4
Ingredients
225g/8oz Broccoli Florets
25g/1oz Butter
50g/2oz Onion, chopped
300ml/10fl.oz. Chicken or Strong Vegetable Stock
300ml/10fl.oz. Dry White Wine
2 teasp Cornflour
150ml/5fl.oz. Milk
Salt and Pepper
100g/4oz Stilton Cheese
150ml/5fl.oz Single Cream
Instructions
1. Melt the butter in a large saucepan, add the broccoli and onions cover and cook gently, stirring occasionally, for 10 minutes until the vegetables are soft but not coloured.
2. Pour in the stock and wine and season lightly. Bring to the boil then simmer, uncovered, for about 15 minutes until the vegetables are quite tender.
3. Allow the soup to cool slightly, then blend to a purée. Return to a clean pan. Reheat gently, but do not allow to boil.
4. Combine the cornflour with the milk then add to the soup. Bring to the boil, stirring constantly and simmer for 2-3 minutes.
5. Remove the rind from the cheese and crumble into the soup. Stir until melted but do not boil. Stir in the cream and mix well. Serve immediately.

Cook broccoli and stocks until soft, then blend with a hand blender, add chicken stock cubes or vegetable cook and simmer for a further few minutes, add a good wedge of stilton and double cream. Crisp up some bacon and chop into fine pieces for garnish.

I use ordinary strong cheddar. Mine is broccoli,cheese and onion soup and is very nice. I dont use any herbs.
