Shelf Life & Storage of Herbs
DRIED HERBS & SPICES
Herbs do not "go bad", they lose potency. Heat, light, and moisture damage the dried botanicals. Proper storage for medicinal and culinary herbs requires glass containers, well-sealed, away from moisture, heat and light. Do not store herbs or spices in plastic, vinyl bags, aluminum or tin containers. Avoid keeping herbs near the stove, in the refrigerator or in the bathroom.

With proper storage, you can expect the following shelflife:

* whole, dried - 2 years
* cut, dried - 1 year
* powdered - 6 months

I usually use the rule of thumb of 1 year. Even for my spice rack I try to change them out at least every 18 months at the maximum. Over time they may taste the similar, but they aren't as good as something fresh.

Sounds cool though- you could do a lot of great stuff like rosemary, thyme, sage...almost limitless. I would also bottle them if possible- maybe with an emphasis on keeping the herbs whole- would look pretty cool I think.

I'm not sure how long exactly, but I dry mint leaves and rosemary each season, and they last pretty long, I still have leaves from a year ago and they taste fine...especially in tea!
