Asking what Miso soup tastes like is an incomplete question, more like asking what does chicken broth taste like. Miso is just a base, much like chicken broth in America, you add ingredients to it to make it into something. I'm sorry the others had a bad experience with it but then again I've had bad chicken soup. What it taste like? It taste like whatever you want it to.

MISO SOUP WITH TOFU
3 c. water
1 tbsp. fish flavored stock
3 tsp. soy bean paste (Miso)
1/2 c. tofu
3 tsp. green onion, sliced thinly from top to end
Combine water and fish flavored stock, and bring to boil. Add diced tofu then dissolve soy bean paste into the soup. Just before serving, sprinkle with the sliced green onion. This will make 4 servings.
Variations:
Add sliced potato and onion, or
Add shredded radish and carrot, or
Add diced eggplant or any other choice which makes you healthy.
MISO SOUP WITH CHICKEN AND VEGETABLES
6 c. Dashi (soup stock)
1/4 c. chicken breast
1/2 c. finely chopped carrots
1 c. finely diced potatoes
2 scallions, chopped fine
1/2 c. miso (bean paste)
Sansho (Japanese pepper), minced, optional
In a saucepan, bring the dashi to a boil. Remove the chicken from the bone and dice. Add the vegetables and the chicken to the stock and cook low, until tender. Add the miso and cook gently another 5 minutes. Remove from heat and pour into soup bowls. Sansho may be added when serving.
DASHI (Soup Stock) :
1" Nori (Japanese seaweed)
5 c. water
1 c. flaked dry bonito
1 1/2 tsp. salt
1 tsp. soy sauce
Rinse the nori well and place in the water in a saucepan. Bring to a boil quickly and remove the nori. Add the bonito to the still boiling broth, then remove from heat immediately and let stand about 2 minutes. Strain through a clean cloth and season with salt and soy sauce.
Note: Dashi is a light clear fish stock, used a lot in Japanese cooking as a soup base

I can't really explain the taste. It sounds really disgusting, it's made with seaweed and tofu. You really can't taste either. It's the broth and I'm not sure what it's made of but, unlike these other people I love it. It is so good. I've had it in Japanese restaurants and also in packets you can buy at the store and just add hot water. You should really try it.

I tried it in a Japanese restaurant and it was NOT nice! I *somehow* managed to drink half a bowl (I hate leaving food in a restaurant coz it makes me feel mean!) but it isn't what I'd call pleasant so I can't imagine it'd be any nicer from a can!

Yes you can but its this brown horrible stuff that tastes like sh*t and i drank it everyday for 2 weeks and i didnt feel any healthier.
