Good Old Fashioned Pancakes
"This is a great recipe that I found in my Grandma's recipe book. Judging from the weathered look of this recipe card, this was a family favorite."

INGREDIENTS
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted ( = 45 gr )
DIRECTIONS
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Grandma's Pancakes
(serves 2 - 3 people)
1 1/4 cups sifted flour
3 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon vanilla
1 beaten egg
1 cup of milk
2 tablespoons salad oil/melted shortening/or bacon fat
Mix and fry on seasoned skillet or griddle
wait til you see bubbles then flip, try to turn only once as this will make the pancakes not as fluffy.

Buttermilk Pancakes
3 cups all-purpose flour
3 tablespoons white sugar
1 tablespoon baking powder
1-1/2 teaspoons baking soda
3/4 teaspoon salt
3 cups buttermilk
1/2 cup milk
3 eggs
1/3 cup butter, melted
Directions
1 In a large bowl, combine flour, baking powder and
baking soda; stir well. In a separate bowl, beat together
buttermilk, milk, eggs and melted butter. Keep the two mixtures
separate until you are ready to cook.
2 Heat a lightly oiled griddle or frying pan over medium
high heat. You can flick water across the surface and if it
beads up and sizzles, it's ready!
3 Pour the wet mixture into the dry mixture, using a
wooden spoon or fork to blend. Stir until it's just blended
together. Do not over stir! Pour or scoop the batter onto the
griddle, using approximately 1/2 cup for each pancake. Brown on
both sides and serve hot.

Blueberry Gingerbread Pancakes
Ingredients:
2 cups flour
1 1/2 teaspoons baking powder
1 1/4 teaspoons ground ginger
3/4 teaspoons pumpkin pie spice
1/4 teaspoons baking soda
1/4 teaspoons salt
3/4 cup light molasses
3/4 cup buttermilk
2 eggs
3 tablespoons vegetable oil
2 cups blueberries
additional vegetable oil
butter and maple syrup
Preparation:
Mix first six dry ingredients in medium bowl and blend well.
In a large bowl, whisk molasses, buttermilk, eggs and 3 tablespoons vegetable oil. Add dry ingredients and whisk just until smooth. Fold in blueberries.
Brush nonstick skillet with vegetable oil. Allow 3 tablespoons batter for each pancake. Cook about a minute and a half on each side. Keep warm in 200 degree oven. Serve with butter and maple syrup.

1. Preheat griddle to 375, or heat griddle over med-high heat. Whisk flour,sugar, baking powder, and salt in medium bowl. Add eggs, milk, and 2 tablespoons melted butter; whisk to combine. Batter should have small to medium lumps.
2. Preheat oven to 175 Test griddle by sprinkling a few drops of water. If water bounces and spatters, it is hot enough.
3. Drop pancake batter on griddle. When bubbles form on top. Flip. Wait about 1 minute. DONE

"Blueberry Sour Cream Pancakes" - 20 pancakes
1/2 cup sugar
2 tbsp. cornstarch
1 cup cold water
4 cups fresh or frozen blueberries
PANCAKES:
2 cups all-purpose flour
1/4 cup sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1 1/2 cups milk
1 cup (8 oz.) sour cream
1/3 cup butter; melted
1 cup fresh or frozen blueberries
For topping, in a large saucepan, combine sugar, cornstarch and water until smooth; add blueberries. Bring to boil over medium heat; cook and stir 2 minutes or until thickened. Remove from heat; cover and keep warm.
For pancakes, combine dry ingredients in bowl. In another bowl, beat eggs; stir in milk, sour cream and butter. Stir into dry ingredients just until blended; fold in blueberries.
Pour batter by 1/4 cupfuls onto a greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown. Serve with blueberry topping.
"Banana Oat Pancakes" - 6 pancakes
1 1/3 cups all-purpose flour
3/4 cup old-fashioned oats
1 tbsp. sugar
2 tsp. baking powder
1/2 tsp. ground cinnamon
1 egg
1 1/3 cups milk
1 cup mashed ripe banana
2 tbsp. vegetable oil
Maple syrup
In large bowl, combine flour, oats, sugar, baking powder and cinnamon. Combine egg, milk, banana and oil; stir into dry ingredients just until moistened. Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Serve with syrup.

The best tasting pancakes are Buttermilk Pancakes. You can pick up a box at your local grocers, Walmart or Kmart - just add water and walla.
I've added bananas in my batter.
whipped cream on top is great too!! with strawberries

aunt jemima follow the instructions on the box, but you decide how much water to add. If you want dry or thick pancake put less water if you want thin pancakes add more water until the batter gets watery. add marshmellows or chocolates while on the frying pan
