Yeah this is really easy to make -
3/4 cup of (washed) lentils
1&1/2 pints of boiling water with a veg stock cube
1/2 teaspoon chili powder
1/2 teaspoon cayenne pepper
1 tablespoon tomato puree
Cook for 40 mins
Garnish with chopped tomatoes and parsley.

Serves: 6
25 Gram Butter (1 oz)
225 Gram Lentils (8 oz)
1 Carrot, diced
1 Large Onion, finely chopped
2 Sticks Celery, chopped
1/2 Small Turnip, diced
Salt and freshly ground black pepper
1.5 Litres Ham or other stock (2 1/2 pints)
Freshly chopped parsley
Method
Melt the butter in a large saucepan and sauté the lentils and all the vegetables.
Season with salt and black pepper and add the stock.
Bring to the boil and simmer for 2 hours.
Adjust the seasoning to taste and serve garnished with parsley.

This is what I do.
Soak the lentils over night like you would beans. Change the water, and boil for a few hours or until soft. Don't salt until the end or else they will harden.
I then brown an onion and some bacon bits in olive oil; add carrots, potatoes, celery and move around for a couple of minutes. Add lentils, 3 cups of stock (or 3 cups of water with 1 or 2 chicken seasoning cube), pinch of oregano, thyme, a laurier leaf, and some rosemary. Shimmer for about 1 hours, until the vegs are cooked, and salt and pepper to taste.

This is an old family Italian recipe. I made it 2 days ago
1 pound lentils rinsed
1 medium onion chopped
2 ribs celery chopped
Olive Oil 1- 2 tablespoons
1 10 ounce frozen chopped spinach
Salt and Pepper to taste
Hot Sauce if you like
Place all ingredients in medium stock pot. Add enough water to cover plus a little more. Bring to boil and simmer till lentils are tender-about 45 minutes. Water will need to be added as it cooks. I suppose you could add a meat like sausage, but I've never done it. Makes a good hearty meal but itself. Add homemade bread YUMMY!

Quick and easy - chop up a leek or whichever veggie takes your fancy, add lentils, 2 cups of water, stock cube. Simmer for 10 mins. If you use green lentils they thicken the soup naturally.

Lentil Soup
Makes 12 servings
Ingredients
2 slices bacon, diced in thirds
1 cup chopped onion
1 cup diced carrots
1 clove garlic, minced
6 cups cold water
4 cups beef broth
1/2 cup tomato paste
1 cup potatoes, diced
1 1/2 cups dry lentils
1 teaspoon salt
2 whole cloves
2 bay leaves
2 tablespoons red wine vinegar
2 cups sliced smoked turkey sausage
Preparation:
In large soup kettle, sauté bacon, onions, carrots and garlic until onion is tender. Add water, broth, tomato paste, potatoes, lentils, salt, cloves and bay leaves. Simmer covered for 1 1/2 hours.
Add vinegar and sausage and cook another 1/2 hour. Remove bay leaves before serving.

Hearty Lentil Soup
2 cups green lentils
1 head garlic, peeled and finely minced or pressed
2 med. onions finely chopped
1 1/2 T olive oil
1/2 bunch celery chopped into 1/2 inch pieces
4-5 carrots sliced into 1/2 inch pieces
4 medium potatoes cut into 1 inch cubes
8 to 10 cups water or stock
2 bay leafs (remove before serving)
1 T finely chopped parsley
1 tsp. thyme
1 tsp. oregano
salt and pepper to taste
Vegetable Options
zucchini
corn
peas
asparagus
mushrooms
bell peppers
green beans
tomatoes
1. Sauté onions and garlic in olive oil over medium heat for about five minutes or until soft.
2. Add onions and garlic to stock pot with water or stock.
3. Add remaining ingredients and simmer, stirring occassionally for at least 1 hour.
Like most soups of this type, this one will taste even better the second day when the flavors have had a chance to develop
Moroccan Lentil Soup
INGREDIENTS:
* 2 onions, chopped
* 2 cloves garlic, minced
* 1 teaspoon grated fresh ginger
* 6 cups water
* 1 cup red lentils
* 1 (15 ounce) can garbanzo beans, drained
* 1 (19 ounce) can cannellini beans
* 1 (14.5 ounce) can diced tomatoes
* 1/2 cup diced carrots
* 1/2 cup chopped celery
* 1 teaspoon garam masala
* 1 1/2 teaspoons ground cardamom
* 1/2 teaspoon ground cayenne pepper
* 1/2 teaspoon ground cumin
* 1 tablespoon olive oil
DIRECTIONS:
1. In large pot saute; the onions, garlic, and ginger in a little olive oil for about 5 minutes.
2. Add the water, lentils, chick peas, white kidney beans, diced tomatoes, carrots, celery, garam masala, cardamom, cayenne pepper and cumin. Bring to a boil for a few minutes then simmer for 1 to 1 1/2 hours or longer, until the lentils are soft.
3. Puree half the soup in a food processor or blender. Return the pureed soup to the pot, stir and enjoy!
Crockpot Lentil Soup With Ham
INGREDIENTS:
* 2 cups lentils
* 1 to 1 1/2 cups diced ham
* 1 cup chopped onion
* 1 bay leaf
* 2 ribs celery, chopped
* 1/2 cup diced carrots
* 1 clove garlic, minced
* seasoned salt and pepper, to taste
PREPARATION:
Combine all ingredients with 2 quarts water in the slow cooker. Cook on low, covered, 8 to 10 hours. Taste and adjust seasonings and serve.

Nope but I got this sent on here the other day, tried it and it was delish :) . . just adapt it ! . . . and thanks to CAROL G :)
This is really easy and quick, get a large pan, then chop a large onion, half a leek, one turnip diced, a bit of swede diced, one stick of celery, 2 medium carrots diced/sliced, put all ingredients in the pan add a small amount of water to cover bottom of pan, put on lid and gently steam for 5-6 mins on low heat, meanwhile chop some green cabbage or kale into small ribbons, add 3/4 pint of stock, vegetable or chicken stock cube and the cabbage, season well with black pepper and salt, i like to add a tiny bit of dried sage, it gives the soup a really nice taste! you can add chopped up chicken leftovers, a handful of lentils, or small dried pasta, whatever floats your boat, cook until all the veggies are soft but not overcooked, about 25-40 mins, depends on the quantity, you could make dumplings to add to it as well, but that is the basic recipe for a veg soup or broth!! good luck hope this helped! (if you dont like swede or turnip use alternatives, courgettes, sweet potato etc)

For lentil soup, I just put a small bag of brown lentils, a bag of frozen "stew vegetables" (carrots, potatoes, onions, celery), and 4-6 cups of vegetable broth in a crock pot. Leave it on "low" for 6 hours or so. Really easy!

1 pound Lentils
1/2 cup Chopped onion
1/2 cup Sliced celery
1/2 cup Sliced carrots
1/8 teaspoon Garlic salt
2 1/2 teaspoons Salt
1 1/2 teaspoons Oregano
6 ounces Can tomato paste
8 cups Water
20 ounces Can tomatoes
In a large stock pot, combine all of the ingredients except the tomatoes.
Cook for 1 hour and 30 minutes. Add the tomatoes and simmer for 30 minutes.
