Could it be that the pancakes dough, essentially, is tasteless and bland. So, when you pour the syrup and then bite it, it takes away a bit of the sweetness of the syrup.

Just like, if you were to put one lump of sugar in coffee and sip: it may be rather inadequate! And yet, if you pop that sugar cube into your mouth straight, boy! That is sweet!!

Watch out for diabetes, though!

It becomes less saturated when it's absorbed into the mass of the pancake.

spread a thin layer of margarine or butter first and that is like a coating and the syrup won't soak in as bad or as fast!
