What I like about the coffee shops I go to:
Space (so you're not sitting too close to others)
No echo (so the loud talkers aren't even louder...our Starbucks is like sitting inside a tin can!)
Free wireless internet
Good coffee
Friendly employees
Free stuff once in awhile
Good cookies! :)

I see several of my coffee house desires above but here are the most crucial to me:
-Free Wi-fi...I now go to a place I don't like as well because my favorite place doesn't offer this
-Something to eat other than sugar...a small menu with a soup or sandwich of the day
-My favorite place has a fireplace...that would be way expensive to add to an existing place though
-Friendly employees are a MUST

Friendly faces that greet the customers.
No cartoons posted that make fun of customers.
Some holiday trimmings.
Good smells (even if it mean spraying fake gingerbread)
Cleanliness
Shaker cans of chocolate, nutmeg, cinnamon,
Free wireless
Real cream, not milk, and certainly not the stuff that can stay out all month without affecting it.
Large muffins, cake slices, or the like
Small goodies like Ghiardelli squares
Some things I don't like
Sometimes a place gives you a sense that you're interrupting the employees while they socialize with each other.
Lukewarm drinks (to avoid a MCDonald's lawsuit)
Places that want to call me by my first name

To improve a coffe shop.............
make sure you have variety of coffe selections like cappuchino, frape, american cofee and more.
make sure you have a wide variety of desserts
like tarts, cakes, cookies, mouse, and ect.
make sure your employees are friendly
try to make the customer laugh or have a good time while having food and they will be sure to come again
You must have space no one wants a crowded place were everyone can hear your conversation, they want privacy.
Cleanes- make sure tables are clean wiped and ready after a customer leaves and comes, make sure tha cups are clean and so is siverwear. TRUST ME MY UNCLE ONES A COFEE SHOP

make sure your employees are happy. I won't return to a place where the employees are rude . Sometimes they act like you are just a big inconvenience to them. And make the place cozy and relaxing where you can actually sit with a friend and talk without a lot of noise or people standing in line around you.

The best people to ask is your customers. Some want live music, some want internet.some want quiet. Ask they will be happy to tell. Most importantly they want and sometimes need a great cup of coffee.

on a health note.
Make sure you have those flycatchers right at the door.
we have coffee shops that have flies and the sight of them on donuts etc..... not very appealing.
If, your coffee is good and your desserts are yummy. the customers will come!

make it more warm and homey or something, improve the atmosphere. those are important. if it's like white walls and a counter i dont think i'd go there. maybe put in some interesting art?
