Thyme is a low-growing woody herb which is native to the Mediterranean area, but grows easily in temperate climates as an annual. It also will grow well on a kitchen windowledge with lots of sunshine. Pronounce it like "time"... the "H" is silent.
Thyme is pungent and fragrant, and even more so when crushed. It has small, roundish leaves on delicate stems. The fragrance is similar to oregano. Use it to flavor meats, stews, chicken or fish. The dried herb is generally sold as powdered or crushed. A little thyme goes a long way, as the dried herb's flavor is quite concentrated.

Sure its a herb and a very popular one too! Anything edible from Italy or even the Balkans, that has tomatoes and meat is most likely to have Thyme in it too! The Americans love it too. The Indians have something similar called Ajwain. Both have Thymol as the active ingredient.

Thyme has a strong piquant or lemony flavor. For fresh use, the flavor is best just before flowering.
You can enhance the flavor of meat, fish and poultry dishes with it.
For chicken and fish marinades, bruise fresh sprigs of thyme and tarragon, and combine with red-wine vinegar and olive oil.
Use in herb butters and cottage cheese.
It also has antibacterial properties. It is used in herbal teas for colds and flu's. Has a therapeutic effect on the lungs too.
