Another way to fix a pork roast is to add 1 cup of water to the bottom of the pan and seal the roast in with aluminum foil. Bake at 350 for 2 hours, then pull it into pieces. Cover the meat with 2 cups of a good barbeque sauce and reseal the foil. Bake for approx. another 45 minutes. Shred the meat and serve, adding more sauce to taste and to remoisten if necessary.
I make this pulled-pork recipe several times a month. It makes awesome sandwiches the next day too. Serve with bread and butter pickles, potatoes or rice.
If you don't want the shredded effect, add the barbeque sauce right at the beginning, and take the meat out and serve it sliced instead of waiting another 45 minutes to shred it.
Oh, my mouth's watering just thinking about this! I know what I'm fixing for dinner tomorrow. Btw, this works well with any pork cut, from shoulder and butt roasts to pork loin, whatever's on sale.

Salt, pepper, garlic and coriander are what I use.
Coriander is a herb kind of like sage and adds a little "jazz" to a pork roast.
Pat roast dry. Sprinkle with seasonings [easy on coriander] and put in a covered roaster, bake at 350 degrees Fahrenheit until roast temp. is 165 degrees in center.Don't over cook.

If you are making crackling slash the skin as you normally would, then at regular intervals stick garlic slivers and rosemary sprigs into the incisions. Rub with butter and plenty of salt and pepper and cook as you would normally do.
Serve this with herbed roast potatoes and red cabbage and apple for one of the vegetable dishes. Make this today and then it will taste even better tomorrow just warmed through.
Take the pan juices while the meat is resting and add some red wine, onion salt and pepper, boil down hard until thickened - thoug you could use cornfour to thicken. You could also add creme fraiche to make it more luxurious.

Try this ... use onion soup mix in the pkg.
just rub it down with the mix and pop it in the oven
Here is what I do !
Place beef pot roast in crock-pot and sprinkle with Lipton onion soup mix. and sometimes I make small slits in the roast and place slivers of fresh garlic in the slots...Add carrots and new potatoes. Pour water over pot roast. Cook on low until tender. Thicken the gravy with a little four or cornstarch.

try mixing honey and whole grain mustard and spread all over the meat, if u want crackling,dont put the honey mix over the skin side,use salt and powdered english mustard rubbed in well.enjoy

you can roll it in curry powder or similar and then roast it, while basting lots to keep it moist.
you can then serve it with a gravy made with mustard.
