Ingredients:
1/2 cup Fine Semolina (Rava)
1/2 tbsp Plain Flour (Maida)
3 tbsp Clubsoda
Salt to taste
For Pani:
1 1/2 cups Chopped Mint Leaves
1 tbsp Garam Masala
1/3 cup Red Chili Powder
1 inch Coriander (dhania) Powder
4-5 Crushed coriander seeds
1 tsp Fennel seeds
1 1/2 tsp Cumin Seeds
Salt to taste
Filling:
2 Mashed potatoes with salt to taste
1 cup Boiled garbanzo beans
Method:
* Mix semolina, plain flour, soda water and salt. Knead well to make a semi-stiff dough. Cover it with clean wet cloth for about 10 minutes.
* Divide the dough into forty equal portions and roll each portion into circles. Place each circle under damp cloth right after rolling.
* Heat oil in a kadhai. Deep fry these circles, slightly pressing with a slotted spoon, until they puff up and are golden brown.
* Place the puffed circles ("puris") on absorbent kitchen tissue. Extra puris should be stored in an air-tight container. For Pani (Water)
* Soak the tamarind in ½ cup of warm water for approximately 45 minutes. Strain out the pulp to get tamarind water.
* Add mint leaves, chopped coriander, ginger, chillies and cumin seed. Add a little water and mix to a smooth consistency using a blender.
* Transfer the paste into a large bowl. Add 1 litre of water, continuously mixing the contents with a spoon. Add black salt and salt. Mix well.
* Refrigerate for about 2 hours to ensure proper blending.
Serving Panipuri:
* Poke a small hole in the center of each puri.
* Add small quantity of mashed fried potatoes and garbanzo beans as filling. Add a little tamarind chutney. Dip in pani so that puri is filled with it. Then Serve.

Pani Puri recipe - Pani Puris, also commonly called 'Gol gappas' by Indians can be bought from Indian supermarkets or chaat shops in bags ready to be filled.
If pani puri masala is not available, mix 1/4 tsp chilli powderr, 1 tsp cumin powder, 1 tsp kala namak, 1 tbsp tamarind pulp & a pinch of salt.
Pani puri recipe Ingredients
250g Pani Puri or gol gappa
125g black chickpeas
100g steamed bean sprouts (lentils should just begin to sprout) - optional
125g potatoes, boiled and coarsely mashed
1 bunch of mint leaves
1/2 bunch of coriander leaves
salt to taste
1/4 tsp chilli powder
6 tbsp pani poori masala
mint chutney
tamarind chutney
Method
Grind the mint and coriander leaves into a paste.
Mix pani puri masala in 2 litres of cold water. Add mint and coriander paste and the ice cubes.
Wash chick peas and soak overnight. Next day, boil in a pan or pressure cook with water and salt, until soft. Drain and keep aside.
Add salt, chilli powder to the potatoes and mix in the chick peas and the bean sprouts, if using. Make a hole on one side in each gol gappa, and fill it with a teaspoon of the potato mixture.
Top with a little mint and tamarind chutney. To eat, dip each gol gappa into the prepared water and eat.

To make puri:

2 tblsp roasted Cumin Seed (Jeera) Powder
2 tblsp un-roasted Cumin Seed (Jeera)

3 Green Chilly (Hari Mirch)
2 tblsp Mint Leaves (Pudina Leaves) Chutney
1 tblsp Black Salt (kala namak )
2 tblsp Jaggary (Gur)
How to make pani puri:
To make pani:
Measure all ingredients.
Adjust spices and tangyness to taste.
Strain through a wire strainer to remove any rough bits.
To make puri:
Mix sooji, maida, baking soda, salt and enough water to knead a soft dough.
Stand covered with wet cloth for 15-20 minutes.
Make small sized balls.
With the help of some dry maida or sooji, roll into thin rounds.
Heat oil in a pan and deep fry puris till very light brown and crisp.
Drain in a paper towel for a while to dry out the oil.
Store in an airtight container when cool.

here is short and sweet recipe for pani puri or gol gappa:
INGREDIENTS:1 cup All Purpose Flour
1 cup Semolina
pinch Milk(for making dough)
½ tsp. Baking Soda
2 tbsps. Clarified Butter
Salt to taste
Vegetable Oil for frying(for deep frying)
pinch Gorbanzo Beans(boiled, according to need)
½ cup tamarind(seedless, soaked in 1½ cup water)
½ tsp. Black Salt
½ tsp. Dry Ginger(powder)
½ tsp. All spice powder
1½ tsps. Red Chilies(powder)
DIRECTIONS:(FOR DOUGH)
With the maida, sooji, baking powder and salt make a dough by adding milk.
Roll small rotis and cut into small size circles using a cutter.
Deep fry all of them on low heat.
(FOR CHUTNEY)
Add all ingredients in tamarind soaked water and stir well.
(FOR SERVING)
serve Gol Gappa with chutney and chana.

For gravy:
Dried green peas - 100 gm
Potato - 1 no
Cloves(Grambu) - 1/4 tsp
Cinnamon(Karugapatta) - 1/4 tsp
Nutmeg(Jathikka) powder - 1/4 tsp
Chilly powder
Turmeric powder
Chat masala powder
Cornflour - 2 tsp
Curry leaves
Mint leaves(Pudhina)
For pooris:
Allpurpose flour(Maida) - 3 cups
Semolina(Rava/Sooji) - 3 tsp
Salt - As reqd
Oil for frying
For garnishing:
Carrot (grated)
Tomato - 1/2
(chopped finely)
Onion - 3 nos
(chopped finely)
Coriander leaves - A bunch
(chopped finely)
)Cook peas & potato together in a pressure cooker along with some water & salt.
2)Mash it well to make it as thick as a paste.
3)Add spices, turmeric powder, chilly powder, chat masala and nutmeg powder and bring it to boil.
4)Add the cornflour mixed with 1/4 cup of water into the gravy to make it thicker.
5)Add some pudina & curry leaves & switch off the flame.
6)Mix together the ingredients for making pooris and knead them to make a smooth dough.
7)Make big balls of the above dough and roll them out as for pooris.
8)Using inverted glass or caps of bottles, press them over the big poori to make smaller ones.
9)Make 4 or 5 from the bigger poori dough & fry it in the oil.
10)Arrange the pooris first on a serving plate.
11)Pour some gravy over it.
12)Garnish with the above given ingredients by speading over the pooris.
