Incense has got many uses specially during prayers and meditation. It focusses attention on one scent only and does not distract the mind with other odors/smell of food etc.
Check out whether they are not using it to mask other odors in their room.

I just use it because it smells good. It's used in some religious practices--I associate certain scents of it with Buddhist monasteries because there's nearly always nag champa incense burning there, but most people using it at home, I think, just like the smell.
