Baked Sunday Pancake with Raspberry Sauce:

NOTES: You may know this puffy, eggy treat by another name: a Dutch baby. The pancake puffs up as it bakes and then sinks down after it's removed from the oven, making the perfect canvas for raspberry sauce. You could also top the pancake with powdered sugar and a squeeze of lemon, if you like. PREP AND COOK TIME: About 20 minutes.

3 tablespoons butter
3 large eggs
3/4 cup milk
1/2 teaspoon vanilla
1/2 cup all-purpose flour
2 tablespoons sugar
1/8 teaspoon salt
Raspberry sauce (recipe follows)

1. Melt butter in a 10-inch ovenproof frying pan over low heat. Remove from heat.

2. In a large bowl or blender, beat or whirl eggs until light and pale. Beat or blend in milk, vanilla, flour, sugar, and salt.

3. Pour batter into prepared pan and bake in a 425° oven until pancake is puffed and lightly browned, 15 to 20 minutes. Slice into wedges and serve immediately with raspberry sauce.

Raspberry sauce: In a food processor or blender, whirl 4 cups rinsed fresh or thawed frozen raspberries until smooth. Rub purée through a fine strainer into a bowl; discard seeds. Stir 1/4 cup sugar into raspberry purée; taste, and add more sugar if desired. Makes 1 1/4 cups.

Yield: Makes 2 to 4 servings

If youre making on the stove pancakes and not in the oven pancakes then I can help you. First you get a bowl to mix it in, a spoon or blender to mix it with, and the ingredients you're going to use. You can also just buy complete pancake mix and it'll tell you that on hte box adn all you have to do is add water and mix it up then follow the steps below.When I make my pancakes, I use Krustel pancake mix from Sams club and I put vanilla extract, cinnamon, water and the batter and then mix it. Put a little butter, margarine or pam in the skillet and pour the batter into skillet usually 2 at a time. You will know when they need to be flipped because they'll either have a lot of popped bubbles on top of them or they'll be smelling. Once that happens, flip it over and let the other side cook. Cook all you'll eat and enjoy.

I have an incredibly easy Pancake recipe...I run a busy cafe and sell tonnes of them...

2 cups Self Raising Flour
1/4 cup Castor Sugar
Milk to mix
75gm Melted Butter

This recipe is the easiest pancake recipe I have ever come by...

Sift Flour into a bowl and add sugar...stir to combine.

Make a well in the middle with a wisk, add about 1 cup milk to start with and wisk the milk and gradually incorporate the flour on each stir.

Stir till smooth. (Add more milk if needed) and keep wisking till the mixture resembles a thick batter (Hot-Cakes) or thinner batter (Pan Cakes)

When totally combined and no lumps remain, whisk in the melted butter. This will create a smoth textured batter.

Cook in a heavey based frypan over a medium heat till small bubbles appear. Flip and cook on other side till done.

The recipe is such that if your pancake mixture is too thick just add more milk, if you stuff up and make it too thin, whisk in some more flour...Too easy.

If you want to try your hands at crepes this recipe will work as well, just make it really smooth and thin and use plain flour not self raising.

Pecan Pancakes (served with coconut syrup)

2 cups Bisquick Pancake Mix
1/2 cup of milk
1 cup crused Pecans

(mix together)

Pour your pancake batter in a pan, making it round shaped (use at least 3 tablespoons everytime you scoop). Use non-stick Pam cooking spray. Turn pancake over when it starts to bubble or when bottom looks caramel brown. Do the same for the other side (base it on caramel brown color). You can garnish with fresh fruits (any kind you like) use Coconut Syrup & enjoy!

best if eaten with scrambled eggs, sausage or bacon & hashbrowns.

(pancakes from scratch)

one cup flour
2 teaspoons baking powder

beat and add:
one egg (optional)

add:
1 cup milk
stir gradually to make smooth
add: 1 teaspoon melted butter or oil

Cook in a hot frying pan, flip pancakes when they bubble, to brown the other side.

Serve with maple syrup.

Once you have decided on the batter of choice ,pour it onto a preheated skillet well oiled if not nonstick and when you see it bubble it's time to turn and give the other side about the same time to cook or till golden brown. remove to the stack for ready
retrieval and consumption....I trust you know how to eat them...

Go to the frozen food section of your grocery store & get a box of Krustys (spelling ?) frozen pancakes & follow the instructions. They are good. My boys love them!!!! Otherwise, get a box of Bisquick & follow the directions on the box....
